Our worldwide team of experts in education, psychology, and health & wellness created Mini Me Yoga's first ever home school course!

Over the last 2 weeks we have been exploring our Galactic and Universe theme, enjoying games, exercises, activities, meditations, stories, songs and more!!

To Be or Not To Be Gluten Free (Part 2)
 

Buenas Dias to all you Mini Me Yogis as I write this on my holidays from the beautiful South of Spain! Ole!!!

Having previously lived here in Andalucia I used to be a little frustrated at the ability to buy healthy foods, particularly products I could use in my gluten free baking. Since arriving for my holidays I have noticed a big change in the advertising of gluten free options in the bakers, in the restaurants and in the supermarkets. Gluten free has finally arrived in the South of Spain!! So you would think I would be happy... no?

On the one hand I am ‘feliz’ that they are moving with the times here and that they are at least becoming aware of the issues of Gluten. This is an amazing change for the people who have bread with every meal and with EVERY tapas. Their diet is typically loaded heavily with carbs and they have unfortunately moved away from their healthy, natural Mediterranean diet towards a packaged diet loaded with sugars and hidden glutens. Seeing the gluten free awareness that is developing here means they are on the right track towards examining the role of gluten in Celiac and Non Celiac Gluten Sensitivity (NCGS).

However, like many other countries in the world this awareness is sadly more likely due to the MASSIVE money making opportunity that is Gluten Free. The food companies have followed the science behind Gluten sensitivity and have RAN with it, developing 1000’s of packaged foods which own the ‘Gluten Free’ title. 

‘Surely this is a good thing’, I hear you say? My reply is that it certainly would be if these new Gluten Free packaged foods were healthy. In removing gluten from a product such as bread or other baked goods as an example, one has to replace it with another flour alternative. Those alternatives which are cheap to use and which can make a product resemble the original are unfortunately high in sugar. The typical replacements in Gluten Free Products involve Rice Flours, Tapioca Flours etc. which are very quick to spike blood sugar. In addition to this sugar itself in one form or another is often added. 

Hence, Gluten Free foods try to solve one health issue by giving the person an option in their diet but unfortunately can create or assist in the development of another health problem through the poor nutritional quality of ingredients used.

My answer to this is to only buy a Gluten Free product if it was naturally gluten free in the first place!! There are many natural foods that are gluten free and will contain this trademark  . This is used now to help you to see which foods you are eating which naturally do not contain Gluten. Simply be vigilant about what is naturally gluten free and what is not!!

The other thing I like to do is make my own Gluten Free products!! My own versions of the lovely treats we grew up with as children. There are MANY flours and products which we can use to help with this, my favourite being coconut flour. It simply takes a little time to get used to cooking and baking this way and what measurements and alternatives we need to use. There is a FOUNTAIN of knowledge on the internet for healthy gluten free cooking. My advice is to look at the Paleo/Primal based recipes as they focus on the low sugar options and healthy alternatives.

Hi! My name is Dr Ann Donnelly. I have over 20 years experience as a GP & in later years I work in palliative medicine in both hospital & hospice. I am passionate about health & wellbeing & have my own healing practice which seeks to Empower individuals in all aspects of their well being. As such, I've explored & trained in a wide variety of healing modalities including acupuncture, homeopathy, NLP, Emotional freedom therapy and I'm a yoga teacher.

For over 10 years now, I've studied metaphysics with the Modern Mystery School which has enriched my appreciation of the human energy system & taken my healing practice to a whole new level. I've also been directly involved in developing & teaching a foundation degree in science which integrates complementary & orthodox approaches to healing. I am passionate about an individual's ability to create peace, harmony, health & healing for themselves! 

I am delighted to be working with Dr. Kate Bartram-Brown to develop a program for teachers & health professionals to help actively manage stress to create a happier more productive working life.

Welcome Jonathan G. Itchon, Mini Me Yoga's Plant Based Chef!

I am Jonathan G. Itchon and I am a plant based chef specializing in high-vibrational, allergen-friendly foods. I am also a Healer in the revered lineage of King Salomon, as well as an award-winning actor, writer, counselor, and fitness instructor. 

My inspiration for sharing my passion for food comes from my own journey of healing my relationship to food.  I used to battle with food and was very sick for much of my earlier life.  But through learning how to choose what I eat based on how it makes me feel and not on a diet, a trend, or what I was taught I'm supposed to eat, I discovered a whole new way of living filled with joy, vitality, and possibility!  It is my intention to pay that forward, and to support others in learning to love food through finding the foods that love them back.  To bring healing, to restore joy, and to help all of us remember how to honor and respect the sacred ritual of eating so we can live in a better, more peaceful, world for ourselves and all generations to come.

Chilled Watermelon Soup with Cucumber & Jicama

{Gluten-Free, Vegan, & Raw}

 

Active Prep Time:  10 minutes

Inactive Prep Time:  1-2 hours

Cooking Time:  none

Yield:  about 1 quart

 

3 c seedless watermelon, roughly diced

1/2 c cucumber, peeled and seeded

1/4 c fresh squeezed orange juice

1/8 c fresh squeezed lime juice

2 teaspoons ginger puree

scant 1/4 teaspoon Himalayan pink salt

1-2 pinches cayenne (optional)

3-4 sprigs mint leaves

1/4 c jicama, peeled and finely diced (can substitute a tart apple, Asian pear, daikon radish, or additional cucumber)

1/4 c cucumber, peeled, seeded, and finely diced

1/3 c seedless watermelon, finely diced

1/8 c watermelon rind (the pale green/white part), finely diced

extra virgin olive oil, sea salt and/or cracked black pepper, to garnish


What you'll need:  Food processor or blender, large glass mason jar or container

 

1.  Combine watermelon, cucumber, juices, mint, and seasonings into food processor or blender and run until mostly smooth.  

2.  Transfer to your glass mason jar or container and add the finely diced radish, cucumber, watermelon, and watermelon rind and stir to combine.  The watermelon rind adds nice tartness and texture, and I also liked using it since it means less waste when breaking down the watermelon. 

3.  Chill for 1-2 hours to allow flavors to come together. 

4.  Serve in chilled bowls and garnish with a swirl of your favorite olive oil, a sprinkle of sea salt, black pepper, and additional herbs or diced cucumber, watermelon, or jicama if you like.
 

This soup will keep for up to 4 days in the refrigerator, but I doubt it'll last that long!  To have something be so easy to make and wonderfully delicious and nutritious is a testament that when ingredients are in season and full of vitality and flavor, allow them to speak for themselves.

We are what we eat.  So let's make food magickal again, shall we?

Imagine that you are in outer space and going to visit the planets in a brand new solar system.

Lay out the cards, dot them around the garden or room. Each card represents a planet.

There is no gravity so you need to hold onto each other as you space walk or space hop/

Play music that allows you to feel like you are in space 

Perhaps you can make space helmets or suits 

As you explore the solar system to the music - each time you reach a planet - you shout out the planet you have discovered and to celebrate you do the pose. Once finished start to space walk to the next planet.

Do this until the music finishes or as long as you like!
