What's ripe in July? Swiss Chard.

Swiss Chard has a naturally bittersweet flavor and it's packed with important vitamins and minerals. While you will reap the most nutritional benefit from chard that is freshly picked, the nice thing about Swiss Chard is that it will saute nicely even when limp and will still taste delicious.

Simple Swiss Chard Recipe-
2 tablespoons Olive oil
4 garlic cloves, thinly sliced
1 teaspoon crushed red pepper flakes
2 large bunches Swiss chard, ribs and stems removed and reserved, leaves torn into 2” pieces (about 12 cups)

Preparation: Heat Olive oil in a large skillet over medium heat. Cook garlic, stirring occasionally, until golden brown, about 2 minutes. Add red pepper flakes and half of Swiss chard, season with salt and pepper, and cook, tossing often, until wilted, about 4 minutes. Add lemon juice and remaining chard and cook, tossing, just until all chard is wilted, about 1 minute; season with salt and pepper.

Onions!
We often find a plethora of different onions in our CSA shares or at farmer's markets. Here is a list of common onions to the US:

Here's a bit of information on how to store and prepare these important cooking essentials. There are two types of globe (yellow & red) onions- pungent and mild. Mild onions are generally large, juicy, and have think rings. They can be eaten raw or cooked. These onions won't store well for longer than two months so use them up!-in sauces, pickles, and salsa's. Popular mild onions are Spanish onions. Vidalia, and Bermuda onions. Pungent onions are generally smaller, with tighter skins, smaller rings, and they make your eyes water when chopping. Popular pungent onions are Candy, Copra, Red Weathersfield, and Ebenezer. The sulfurous compound that makes your eyes sting also helps these onions "keep" or store.

To cure, I spread the onions on some scrap building paper (newspapers or even the bare floor is fine) in the barn and give them as much room as possible. In drier parts of the country, farmers and gardeners often let their onions cure right in the row after they pull them from the ground.
When cured cut the ends and store in a cool, dry place. Never store onions in the refrigerator. (Unless they're fresh) Enjoy our summer's bounty of fresh onions while you can, you won't see them again until next year!
