Tips for a Safe Picnic
For many Canadians, summer is time for picnics in the park and backyard barbeques. Unfortunately, warmer temperatures make it easier for bacteria to multiply in food. When thinking about spoiled food, we immediately think about raw meat left at room temperature or undercooked. However, E. coli for example can also grow on our fruits and vegetables and affect water supply.
E. coli bacteria will produce a toxin which can cause damage to red blood cells, the kidneys and other organs. In ten percent of children, E. coli infection leads to Hemolytic Uremic Syndrome (HUS), which is one of the leading causes of acute kidney failure in children. E.coli is most dangerous to young children, elderly adults and those people with immune problems.
