Culinary Workshops
It's been a while.... and it's a whole new season in the kitchen! So some of our favourite summery flavours are making an appearance before Christmas..... Yes, we said it - CHRISTMAS! We know it is only August - but we are fielding inquiries as to whether we are doing our super-popular "Everything but the Ham" Christmas Entertaining Workshops and the answer is yes - we're back with a whole new menu for 2017. We love testing recipes for these workshops & we hope you're going to love making them too!

Cheesemaking back with Fresh Mozzarella in September and Fresh Halloumi in November - perfect for salads & pizza's, and even better when you have made it yourself.

Due to so many requests we have Sri Lankan & North African on the menu. We are also popping in South East Asian Street Food, it's our most popular private group workshop & just about everyone goes home intending to re-create the crispy pork belly salad. Due to popular demand we are also bringing back Mexican - we know you can get a meal-kit; but there is nothing quite like home made from scratch

Fresh Sri Lankan - $55 - Tuesday 5 September - 6.45pm  If you love curry, but are looking for something fresher & lighter, this is for you. Using chicken, seafood and vegetables, these curries require the making of a fresh curry paste - so think coconut, chilli, lime, coriander....  Book me in for Fresh Sri Lankan - Tuesday 5 September
Cheesemaking (Mozzarella) - $65 - Monday 11 September - 6.45pm: In this class you will learn how to make Fresh Mozzarella, Ricotta & Mascarpone using the Mad Millie Beginners Cheesemaking Kit. Once we have made our fresh cheese we will enjoy it as a Classic Capresse Salad, and a decadent tiramisu dessert. The class price includes the Mad Millie Beginner Cheesemaking Kit which includes all the equipment plus the consumables to make 15 batches (7.5kg) of fresh cheese (excluding milk).  Book me in for Fresh Mozzarella - Monday 11 September
North African Flavour - $55 - Tuesday 19 September - 6.45pm Back by popular demand. Drawing on the culinary influence of Morocco, Tunisia and Algeria, this workshop celebrates the shared feast. Garlicky White Beans, Smokey Tomato, Fragrant Lamb Tagine, and more sensational accompaniments will all be demonstrated. Perfect with Couscous, Salads, Harissa and a fragrant fruit dessert. Book me in for North African Flavour - Tuesday 19 September
Coastal Moroccan $55 - Tuesday 3 October - 6.45pm The cuisine of Morocco is extremely refined, influenced over the centuries by traders from many Lands. It is defined by a communal style of eating, with many dishes shared around the table. In this workshop we focus on the coast, where seafaring traders came and went leaving behind a cultural melting pot of ingredients.  Think lovely, fresh, fishy & delicious. Tagine, kefta with a nutty roasted pistachio sauce, salads, and a few surprises. A fresh take on some familiar ingredients. Book me in for Coastal Moroccan - Tuesday 3 October
Delicious Dishes from Spain $60 - Thursday 12 October - 6.45pm  The Pig & Paella are two of the icons of Spanish Cuisine. So we've brought them together in one class. Served in the style of tapas - those delicious little dishes found all over Spain - we'll be cooking Perfect Pork Belly, some other pork dishes, a Paella from scratch, then to finish a decadent baked cheesecake. Book me in for Delicious Dishes from Spain - Thursday 12 October
South East Asian Street Food $55 - Tuesday 17 October - 6.45pm  It's back because people keep on asking! This is one of our most popular workshop menu's, based on the "street food" found in Vietnam, Thailand & Laos. The flavours are tasty, fresh and spicy, and the ingredients simple - all the better for entertaining. Book me in for South East Asian Street Food - Tuesday 17 October
Viva Mexico - $60 - Tuesday 31 October - 6.45pm:  Bursting with complex bold flavours – rich, colourful and yes, sometimes hot and spicy – the best Mexican food is rarely found in restaurants. Real Mexican food is a unique blend of Aztec, Mayan, Spanish and Arab culinary cultures and at the heart of Mexican food is Home Cooking. Book me in for Viva Mexico - Tuesday 31 October
A Feast from Persia - $60 - Thursday 9 November - 6.45pm:  The food of Persia is justly famous for its elegance, delicacy and fragrance, in particular its subtle blending of sweet and savoury flavours. Think Walnuts, Saffron, Pomegranate, Pistachio, Mint & Rose Petals. Christmas Entertaining - $55 - Saturday 25 November + Saturday 2 December - 1pm:  Our Christmas Entertaining Workshops are hugely popular year-after-year. We know that just about everyone wants to come again - and once again it's an all new menu for 2017. This is "everything but the ham" - simple canapes, sensational salads + sides, and superb desserts. Book me in for Christmas Entertaining - let us know which date you are coming!

A Recipe to Share

This is a deliciously simple dish that has so many uses. Perfect over pasta with torn leaves, delicious with grilled chicken or fish, and perfect to spoon over roasted root vegetables with some crumbled feta as a side dish. 

Cherry Tomato Vinaigrette

makes 1.5 cups (approx)
 
500g cherry tomatoes                                                                      
3 tablespoons olive oil
1 shallot, finely diced                                                                         
1 tablespoon (or more) red wine vinegar
salt &  freshly ground pepper                                                          
2 tablespoons chopped fresh chives
 
Cut half the cherry tomatoes in half. Heat 1 tablespoon oil in a medium saucepan over medium heat. Add shallot and cook, stirring often, until softened, about 4-5 minutes. Add halved and whole tomatoes and cook, stirring occasionally, until beginning to release juices, 4–6 minutes. Mash some of tomatoes with a spoon. Add 1 tablespoon vinegar and remaining 2 tablespoons oil; season with salt, pepper & additional vinegar.
 
Serve warm or room temperature; add chives just before serving. Vinaigrette can be made (without chives) 2 days ahead. Cover and store in fridge. Bring to room temperature then stir in chives to serve.
