On Monday August 14th we received some great news-- our Limited Winery License to begin Cider & Mead production was approved! We start our first batch today to allow 2 months of fermentation before we open. We are looking forward to releasing our Farmhouse, Hopped, and Dry ciders this fall with more to come!

Introducing our head cider maker: Brian Bolzan
Brian Bolzan moved to Pittsburgh in April to join Threadbare Cider as head Cider Maker, leading Cider & Mead production.  Brian started his fermentation career at Flying Dog Brewery in Frederick, MD before moving to his first love, Cider, at Jack’s Hard Cider. Brian brings a passion for and experience around production processes, quality assurance, local apple sourcing, blending and barrel-aging. Now with Threadbare, he's diving into all the funk that Cider can deliver.

Brian and our Wigle & Threadbare Innovation lead, Michael Foglia, have been hard at work over the past year exploring their wild sides with ferments, yeasts and all kinds of barrels. Together, they have produced more than 100 cider trials with 25 different yeasts!
Introducing our new Threadbare Executive Chef: Jay Wess
Jay joins the Threadbare team after six years at Dinette, where he served as Sous Chef and General Manager.

A Western Pennsylvania native, Jay studied writing, mythology, and folklore at the University of Pittsburgh. Jay's an avid home brewer and cut his culinary teeth managing the kitchen at Lawrenceville's Round Corner Cantina during its early years. He moved on to Dinette, where he served as pizza cook, sous chef, and front of house manager. This September, he reprised his role as chef for Community Human Services' Big Share benefit dinner at Blackberry Meadows Farm.

Jay brings a passion for responsible, seasonal food to Threadbare. He believes in crafting inclusive menus - that all dietary needs are important and all guests should have something thoughtful to eat. His history with brewing will inspire dishes paired with cider and mead, in addition to finding creative uses for brewing by-products, and fermenting food itself.
