Sign of the Month
We were commissioned to build a lightbox by Genii and we made it a point to build a sign that matched their high standards. This sign was fully fabricated in-house. It came complete with 3D lettering and was illuminated from within with LED modules. And because this sign looked so fabulously awesome, we're featuring it in this month's newsletter!

Most of you who have walked into our store may have had the opportunity to meet Drew. For those who have not, we thought you should meet the man responsible for the production of all your signs.

Drew has been with us since 2013 and is backed with a total of 10 years in signage experience. Believe it or not, we have seen Drew perform magic one too many times. That’s the reason why you see us taking on jobs some don’t even dare explore. 

If you are around the area come by and say hello. And if you are lucky, you may see the magic happening!

Caramelized Onion & Bacon Smothered Pork Chops

INGREDIENTS (Serves 4)
6 slices of bacon, chopped
2 small onions, thinly sliced
1/4 teaspoon salt
1/4 teaspoon pepper
4 bone-in pork chops, 1 inch thick
1/2 cup (120ml) chicken broth
1/4 cup (60 ml) heavy cream
 DIRECTIONS
  1. In a large saute pan, cook bacon over medium heat until crisp. Use a slotted spoon to remove to a bowl, reserving bacon grease.
  2. Add onions to bacon grease and sprinkle with salt and papper. Cook, stirringfrequently, for 15 to 20 minutes, until onions are soft and golden brown. Add onions to bacon in the bowl.  
  3. Increase heat to medium high and sprinkle pork chops with salt and pepper. Add chops to pan and brown on the first side  3 minutes. Then turn chops over and reduce heat to medium, cooking on the second side until internal temperature reaches 135F, about 7 to 10 more minutes. Remove to a platter and tent with foil.
  4. Add broth to pan and scrape up any browned bits. Add cream and simmer until mixture is thickened, 2 or 3 minutes. Return onions and bacon to pan and stir to combine.
  5. Top pork chops with onion and bacon mixture and serve.
