Vermont Maple
Balsamic Vinegar

We have searched high and low and it appears that we have found the first of it’s kind, an aged, pure Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont to infuse Balsamic Vinegar from Modena Italy. This balsamic is outrageously good! Think pancakes, waffles, glazed bacon, pork chops, atop ice cream, dressings, marinades, soup, chili, chocolate, cake, fruit, sauces, drizzled over pizza and more! Suggested EVOO Pairings: Basil, Blood Orange, Butter, Chipotle, Eureka Lemon, Harissa, Wild Mushroom & Sage.

This fall, consider substituting Chipotle Infused Olive Oil in place of vegetable oil or butter to give your next batch of brownies a smoky kick!

Did You Know?

Polyphenols are a class of antioxidants found in a variety of foods, like blueberries, nuts and olive oil. Polyphenols such as Oleuropein, Oleocanthal, and hydroxytyrosol impart intensity connected with pepper, bitterness and other desirable flavor characteristics. Recent studies indicate that these potent phenols are responsible for many of the health benefits associated with consuming fresh, high quality extra virgin olive oil. Phenols in olive oil decrease over time or when exposed to heat, oxygen and light. Consuming fresh, well-made Ultra Premium Extra Virgin Olive Oil with high polyphenol content is crucial for those consuming EVOO for its abundant health benefits. Studies show that high polyphenols can be anti-inflammatory, anti-allergen, anti-viral, can fight oxidative stress and aging-related diseases, such as, heart disease, high blood pressure and cholesterol, along with certain types of cancer and more.

Since we are presently gaining access to the new crushes from the southern hemisphere AND we are discussing polyphenols, we simply must mention the arrival of a rare, FRESH crop EVOO from South Africa, "Don Carlo". This robust, single cultivar boasts a whopping 556 polyphenol count. This very pungent EVOO will be extremely popular for those after its superior health benefits. Don Carlo displays notes of tart green apple, bitter herb, cut grass & herbaceous pine. Green apple, sour grass aromas. Bitterness on the front and desirable lingering pungency on the back.
