Enjoy some of our fall favorite recipes!

As you know, I regularly cook for our family of 8. Over the years we've grown from an 8-inch square pan to TWO 9x13-inch baking dishes, at least when it comes to casseroles, cakes, and baking dish kinds of things. We regularly put away 2 pounds of meat in a meal and at least an equal amount of veg.

With a career as a food writer, I've focused on making recipes scaleable. While I'm testing recipes for a crowd, not all of you are. Today I bring you five of our fall favorites that can be made for 8 people as easily as they can be made for 1 person. 

These recipes have been some of my go-to favorites this month. Not only have they been easy to prepare -- my husband and kids have prepped them as well as I -- but they are also pleasing to the whole family.

It's so nice to know your hard work in the kitchen will be well-received by everyone. Am I right? These recipes are just the ticket for fall eating!



Jace's Breakfast Burritos were a major inspiration at our house. I had never thought to combine more than one meat into a breakfast burrito. Nowadays, it's second nature, particularly if we have a little of a few things on hand instead of a lot of one meaty ingredient.

Making breakfast for dinner or lunch is a big favorite with my people. In fact, on my work days, my husband and kids team up to prepare all the elements for lunch. SO good!

If you're going gluten-free, use a gf wrap or just abandon the tortilla part and make Breakfast Burrito Bowls. :)



Bratwurst with Sauteed Peppers and Onions is definitely a must-make for your next game day. Juicy bratwurst topped with tender peppers and onions and a few dollops of mustard? That's a touchdown for sure.

The great thing about this recipe is that you could easily make all the components in advance and keep them warm in crockpots; they'll be ready for devouring at halftime.

If you've got guests avoiding grain or gluten, be sure to have plenty of safe sausages; Aidell's Chicken and Apple are a nice alternative to brats and are super tasty with this veggie saute.



Sundays are my day NOT to work, if I can help it. This month I've been leaning on Chipotle (free kids meals on Sundays in September!) for one meal of the day and The Ultimate Snacky Dinner (or Lunch) for the other. 

Snacky dinners are so easy to pull together -- and everyone loves them! You can make them gluten free by omitting the breads and crackers and you can sub out the cheese with extra veggies, fruit, and nuts.



Homemade Pizza is our Friday night gig. Almost without fail, I mix up a (double) batch of pizza dough while one of my kids mixes up Last-Minute Pizza Sauce.  What would cost $30 at a pizza place is just a few bucks when made at home.

Bake and freeze extra pizzas for quick lunches for later!

Low-carb hint: When I'm watching my carbs, I've assembled my pizza on zucchini boats, portabello mushrooms, or even a bed of spaghetti squash. While not quite pizza, it's a super tasty alternative.



Raspberry Baked Oatmeal has been a go-to breakfast this past month. I can make several pans at once -- or bake them into muffin cups for individual servings. Hearty and full of flavor, it's one of my favorite ways to eat oatmeal.
