OCTOBER AND NOVEMBER ARE MONTHS OF GRATITUDE


We're both so grateful for the beauty the autumn season presents, the health and mobility we enjoy and on November 8th as well as on the 11th, we were reminded of the democratic freedom, safety and pride in being Canadian citizens.  

We're especially thankful for the holidays of Thanksgiving in Canada and then the US.
Since it's our favourite holiday, we usually like to celebrate it twice and that's what we're doing this year, too.

I am particularly grateful for Martin's creative brilliance in the kitchen that allows me to enjoy and share with YOU my favourite holiday dishes. They're nutritious, delicious and were developed for my food sensitivities and both of our healthy diet choices.

I was honoured to be asked to facilitate a brainstorming and planning session at our beautiful Kelowna Yacht Club. Using a technique I learned through the Disney organization and modified for corporate team building and event planning, I met with board members from KYC as well as the Disabled Sailing Association in a session to help plan for their 2017 Mobility Cup. This will be a race and regatta week that will surely inspire and make all of us even more grateful than we already are.

If you'd like to learn about Jan's Storyboarding System or the DSA's upcoming event, just ask… it will be a pleasure to tell you more.

"By popular demand....a second helping for you."

Pumpkin Cheesecake (Gluten & Dairy Free)

½  20 oz can         pumpkin puree
150g - 1 cup          goat’s milk soft cheese (dairy free)
100g - 2/3 cup       dairy free cream cheese
2 Tbs                     coconut whipped topping
2 Tbs                     maple syrup
1 Tbs                     cinnamon
1 Tbs                     nutmeg
1 Tbs                     ground ginger

Place all ingredients in a large mixing bowl and mix thoroughly. Place in pie shell (see recipe below). Cool in refrigerator. Garnish and serve with whipped topping.

Gluten Free Almond Pie Shell

2 cups                   almond flour
2 Tbs                     coconut oil
½ tsp                     Himalayan sea salt
¼ tsp                     baking soda
1 Tbs                     cinnamon
1 Tbs                     ground ginger
1 Tbs                     nutmeg
1 Tbs                     maple syrup

Pulse dry ingredients together in food processor. Add coconut oil and pulse again. Transfer into a large bowl and mix in maple syrup. Mix thoroughly. Press into pre-greased pie shell and bake at 350 for 15 min.

 
GLUTEN FREE STUFFING
 
  • 3 Tbs olive oil
  • 1 large Walla Walla or other sweet onion, diced
  • 3 celery stalks, diced
  • 1 tsp Himalayan sea salt
  • 1 tsp sage
  • 1 tsp black pepper
  • 1 cup chicken or vegetable stock
  • 8-10 slices gluten free bread (such as coconut bread) cubed
  • 200 grams ground sweet Italian sausage
Directions:

Heat oil and sauté onion and celery until clear (approx. 5 mins).
Add sausage and sauté until cooked through.
Add spices, stir, then add bread cubes and sauté.
Finally, add stock and cook over medium heat until it reduces (approx. 20 mins).

Cannabis oil victory for Kyla

A Summerland family is celebrating a victory that will allow their child to legally get the cannabis oil that calms her seizures.

Health Canada has granted an exemption that allows four-year-old Kyla Williams and others like her to access the medicine, as long as they have a letter from the agency stating so.

Kyla has epilepsy and suffered more than 300 seizures a day until taking a strain of the oil known as Charlotte's Web.

The oil has very low levels of THC, the psychoactive ingredient in marijuana, but high levels of cannabidiol, a substance that calms electrical activity in the brain.

"Every time she seizures, her brain deteriorates, so she was not given a long life," her mother Courtney told CTV.

Traditional medication didn't help Kyla, but shipments of the expensive oil were seized multiple times by the Canada Border Services Agency.

"From the very beginning it's been a complete struggle," Kyla's grandmother, Elaine Neussler, said.

"We are extremely happy, and we feel great relief," she said of the decision.

Now, Kyla is often seizure free for weeks at a time.

Neussler's husband, a former RCMP officer, told CTV: "I used to arrest people for the same thing that we're doing. But I will do anything for Kyla and my family."

We first learned about CBD (Cannabidiol) though a PBS documentary with Dr. Sanjay Gupta on CNN. He was adamantly against medical marijuana until meeting a very young girl named Charlotte who was diagnosed with severe juvenile epilepsy. Her hundreds of daily seizures were only controlled with medical marijuana oil.
