Gazebo Room Salad Dressings October Newsletter

Gazebo Room Blogger Recipe: Colorful Greek Pasta Salad

This festive take on Gazebo Room Greek Pasta Salad from beanafoodie.com uses red onion, yellow bell peppers, grape tomatoes and diced cucumber to add a splash of color to a recipe that dates back to the original Gazebo Room Restaurant.

Ingredients:

1 lb orecchiette pasta, or other small pasta
1/2 large red onion, diced
1 pint grape tomatoes, halved
1 large yellow bell pepper, diced
1 English cucumber, diced
1 cup feta cheese, crumbled
1 cup kalamata olives, roughly chopped
1/4 c fresh oregano, roughly chopped
3/4 cup fresh parsley, roughly chopped
1 tsp salt and pepper
1/2-3/4 c  Gazebo Room Greek Salad dressing 


Instructions:

Cook pasta according to package directions.  Drain and set aside in a large mixing bowl.  You may want to add a few drizzles of the salad dressing to keep the pasta from sticking together.
Assemble all the vegetables and herbs – saving the crumbled feta cheese for last.  Mix in all the veggies and herbs with the pasta.
Slowly drizzle in the salad dressing – you may need more or less than what’s called for depending on your preference and how much pasta salad there is.  Toss to combine.
Lastly, gently fold in the crumbled feta cheese trying to keep the cheese in somewhat larger chunks – you don’t want it to disintegrate into the salad.
Refrigerate until ready to use.  Set out at room temp about 30 minutes before ready to serve to allow the pasta salad to come to room temperature.  If refrigerating, you may need to add a small drizzle of the dressing before serving as the pasta will absorb some of it while sitting.

This may seem like common knowledge to those of us who already know, but the humidity settings on your crisper can drastically affect the life of your fruits and veggies. follow the rules above and you'll get at least a few more days out of your produce!
 

 
 
Looking for a way to make eating veggies fun for a picky eater? Thoroughly clean a checkerboard and use veggie slices for game pieces. Let your child eat the pieces that they capture, after dunking them in Gazebo Room Salad Dressing, of course!

 

NEW: On-Bottle Best By Labeling 


We've had a few comments over the years about how our label-stamped Best By date codes would sometimes smudge if exposed to the oil from our dressings. Starting with our most recent batch, we've implemented a new printer into our production line, which will make our Best By dates even easier to read. FYI, our products are all tested for indefinite shelf life, but the Best By date is when you will get the most consistent flavor from our products.
