This week on the farm...
Did you notice the frost Tuesday night? It decimated the tomato and pepper plants still in our home garden, but it made the crops in our high tunnels even sweeter. They start to kick into gear at this time of year. It's all about variety selection; we plant crops in our winter high tunnels that can withstand freezing temperatures and are in fact improved in flavor and quality because of them. Future newsletters will highlight other strategies for growing through the winter.
This week we are providing two recipes that feature arugula, because it is spectacular right now! The leaves are incredibly tender, vibrant, and have a mild peppery flavor. Try some! Also on offer is spinach, bunching kale, mixed salad greens, baby bok choi, and new this week baby butter chard and baby kale.
We at Moose Meadow Farm like to eat greens at least three times each day because they taste good, but here is OFFICIAL REASON #1 to eat fresh greens frequently: Steamed mustard greens and kale lower your cholesterol. Here's how it works. Your liver uses cholesterol to make bile acids. When the acids bind with fiber in greens, they get excreted from your body, which means your liver needs to use more cholesterol to make more bile acids to then excrete more cholesterol from your body.

RECIPES
Try this recipe for Spicy Herby Pesto: It's a bright, fresh tasting accompaniment to any meat or fish, or great stirred into steamed greens or rice.
2 handfuls arugula
1/2 bunch parsley
1/2 bunch cilantro
1/2 one fresh jalapeno
2 cloves garlic, roughly chopped
1" fresh ginger, roughly chopped
pinch salt
2 tablespoons olive oil
1. Place all ingredients in a food processor and blend until smooth. That's it!
Mark Bittman's Southwestern Arugula Salad
8 oz arugula
1 cup corn kernals
2 tablespoon olive oil
1/2 cup cooked black beans
1/3 cup olive oil
2 tablespoons lime juice
1 canned chipotle chile with a drop of adobo
1. Whisk 1/3 cup olive oil, lime juice and chili in a small bowl and set aside.
2. Cook corn in olive oil over medium-high heat until brown, about 5 minutes. Cool slightly. Toss with arugula, beans and dressing.
