It's been a rainy week
and we're a little worried about disease in our crops, we're not going to lie. But we're doing everything we can such as rolling up the sides of our high tunnels to let air circulate around the crops and thinning them so they are less likely to pass any existing fungal spores between each other. No signs of disease yet! Our diligence might just pay off.
This week we have some beautiful lettuce to offer you, in addition to spinach, kale bunches, arugula, baby bok choi, baby chard and mixed salad greens. We cut the lettuce as loose leaves, wash it three times, spin it dry in our industrial sized salad spinner, then bag it for you. The same goes for all of our greens.
Reason #2 to eat greens daily: they are very low in calories, but high in fiber. Fiber content in food makes you feel full. An ounce of raw spinach (about the amount you'd eat in a single salad) has about 7 calories and about 1 gram of fiber. That's 3% of your total daily fiber need and only .3% of your daily calorie needs (based on a 2500 cal diet). So fill up on greens!
Spencer's favorite way to eat greens is by the handful, raw from the bag. Katherine enjoys huge bowls of them dressed with olive oil, cider vinegar, salt and pepper.
