THREE IMPORTANT NEWS ITEMS:
1. We're trying to cut down our use of packaging.  If you can remember to bring back your paper bag, we will re-use it for you.  Alternatively, you can provide us with TWO of your own reusable grocery sacks with your name on them and we'll pack your order in that for you.
2. The Sandpoint hours are now 3:30-5:30.  Sorry for any inconvenience, but Evans Brothers Coffee is now closing at 5 but we will stick around in the parking lot until 5:30.
3. Due to limited supply, we are only offering quarter pound and half pound bags of most greens.  
If I told you we were in the same agricultural zone as Charlottesville, VA and get the same sun exposure as Paris, France, you'd think I was lying.  Right?

Well, our latitude, 48 degrees north, is the same as Paris, France, which means we get the same sun exposure throughout the year as this mild French city.  Paris market gardeners have been exploiting their amount of sunlight to grow year round for centuries.  The addition of the inner row cover inside our high tunnels makes the climate underneath equivalent to two Plant Hardiness Zones warmer, in our case 7b, which is the same as balmy Charlottesville, VA!  

One of the reasons our growing systems work is because we employ both high tunnels and low tunnels over the crops.  The high tunnel is the structure that we walk in and that you've seen pictures of.  The low tunnels are the low lying hoops and cloth suspended right above the crops.  The fabric we use is made of spunbonded polypropylene, the same material that most long johns are made of!  It is insulative and offers 81% of the sun's light through.  We use it every night that is below about 28 degrees, and remove it every time the inside temperature reaches 32 degrees, to allow air to circulate, the soil to warm up, and more light to get through.  

Because of these tricks and facts, the crops that we have this week, mixed greens, spinach, bunched kale, cilantro, bunched Asian greens, baby bok choi, baby chard, carrots and butter lettuce heads, are able to stay fresh and vibrant all winter.

Spinach Stew with Chicken

This recipe comes from North Africa.  Serves 4 and can be served with rice.
1/2 lb spinach
1 lb chicken thighs and wings
2 onions, sliced
2 carrots, diced
1 clove garlic, crushed
1 tsp fresh grated ginger
2 tbs neutral oil like canola
salt and pepper to taste
1 tsp chili powder
1 tsp curry powder
pinch thyme
1. Heat the oil and add the chicken.  Add the onion, garlic, ginger, and spices.  Stir fry for 2 minutes.
2.  Add carrots and 1 1/2 cups water, cover, and cook for 15 minutes.
3.  Add the spinach and taste for seasoning.  Cover and simmer until fully cooked.

  2. Ordering is open Thursday-Sunday for delivery the following Tuesday or Wednesday.

Order and pay online.  You will be prompted to choose a pick up day and location, either TUESDAY in Sandpoint at Evans Brothers Coffee Roasters 514 Church Street 3:30-5:30pm or WEDNESDAY in Clark Fork at Annie's Orchard espresso 54025 Hwy 200 3:30-5:30.  You will receive an email confirmation with your order and pick up location.
