In Our Vineyards
The vines have lost their leaves and are close to dormant until the first signs of spring. The JOLO vineyards team has taken down the electric deer fencing and bird netting. We will soon begin to remove select trees around certain blocks that inhibit early morning sun in some of the blocks.
Also on the winter "to do" list is experimenting with one acre of our Cynthiana grapes by growing them in a divided canopy trellising system. The purpose of divided canopy systems is to expose more of the vine’s foliage to sunlight, resulting in greater fruit production while still maintaining good fruit quality. Cynthiana, the mother of our Pilot Fog, is a prolific grower and absolutely loves it here. To help slow down all of the canopy growth and to get even more concentration into the fruit, we will divide the vines in two from the “Cordons” of the vine. This, in theory, should also increase the vines' fruit production by 35%-50%. It will also allow the vines to focus more nutrients on the fruit.
Divided canopy systems are better suited to high-vigor varieties/rootstocks that require considerable annual effort to maintain a suitable canopy microclimate. With all the rain we usually receive and the nutrient rich soil here at JOLO we have high hopes for this system. And who couldn’t use a little more Pilot Fog in their lives?

Wow! We are STILL busy! All the reds have been harvested and fermented into wine. The reds we harvested this season include Cynthiana, Chambourcin, Merlot, Petit Verdot, Cabernet Franc, Cabernet Sauvignon and Montelpulciano.
We have blended our 2016 Golden Hallows, which consists of 55% Vidal Blanc and 45% Traminette grapes. It is resting and cold stabilizing in our large stainless fermentation tank. All of the lees (deposits of dead yeast or residual yeast and other particles that precipitate, or are carried by the action of "fining" to the bottom of a vat of wine after fermentation and aging) have been removed and it has been filtered through a few stages. It is jam-packed with tropical fruit aromatics like pineapple, passion fruit and lychee, with a backdrop of white flowers. It has a crisp, clean, refreshing finish. We are very proud of this wine and can’t wait for you to try it!

It is primarily Chambourcin with a touch of Traminette, which gives the wine a floral hint. This effervescent wine is loaded with wafts of watermelon, raspberries, tart cherries and floral aromatics. It is just effervescent enough to cleanse the palate from the chalkiest of goat cheese crostinis with olive oil, red onion, lemon and capers. Delish! We believe this is the best Twinkles to date. We are excited to hear your feedback!
Last but not least our 2017 Pink has been rough filtered and is currently cold stabilizing. We anticipate bottling this wine sometime in January for release around Valentine’s Day.
