2016 Sustainable Seafood Ratings Recap
Seafood Watch® released new and updated seafood recommendations on January 9th that included the following species:
  • Abalone
  • Antarctic Krill
  • Channel Catfish
  • Drum, Red
  • Mussels, Blue
  • Salmon, Atlantic
  • Sea Cucumber, Giant Red
  • Tuna (Bigeye, Yellowfin)
  • Wahoo
  • Walleye

Seafood Spotlight: Rainbow Trout
English Sole
Rainbow trout flesh can be white, pink, or orange and has a delicate almost nutty flavor. “Pink” rainbow trout, which are sometimes marketed at a premium price (and preferred by European consumers compared to U.S. consumers that show preference for a whiter fish), get their meat color from a synthetic carotenoid pigment that is added to the fish feed. Rainbow trout are available year-round primarily fresh, although it is also available frozen, smoked, and canned. Product forms include whole dressed trout, boned trout, skin-on pinbone-in fillets, & skin-on boneless fillets. Look for fish with moist flesh, shiny skin and eyes, and a fresh, mild aroma. According to some buyers, raceway-raised fish tends to have more consistent quality, but tend to be smaller in size (~1-2lbs). Trout from ponds/net pens grow faster and are larger (~5-10lbs), but if the water isn't managed properly the fish may have an off flavor caused by algae. Buyer Beware: Some rainbow trout farmers add antibiotics to their feed so buyers who are concerned about this are advised to look for regional farmers who don’t use animal-based feeds, and limit or entirely avoid the use of antibiotics.

Key sustainability sourcing notes for rainbow trout:
  • About 600,000 tons of rainbow trout is produced each year globally with Chile being the largest producer and Norway is second (both of which produce rainbow trout in net pens for export markets)
  • U.S. ranks 8th in rainbow trout production with about 20,000 tons annually
  • Other countries with significant production include Denmark, France, Germany, Iran, Italy, Spain, and the U.K. where most of the inland production supplies domestic markets
  • ~60% of rainbow trout produced in the U.S.  comes from raceways/tanks in Idaho from Clear Springs and ~20% is produced in net pens along the Columbia River from Pacific Aquaculture (owned by Pacific Seafoods)
  • Currently, the majority of rainbow trout consumed in the U.S. is produced domestically, and recent estimates indicate <35% of consumption comes from imports

Falling Waters Farm - Indiana, USA
Falling Waters Farm
Falling Waters Farm was established in May of 2015 with the simple mission of providing local, sustainable produce and fish to their community. The farm, located in a warehouse in downtown Indianapolis produces 100% local Indiana products year-round. Currently raising over 200,000 tilapia and yellow perch, the discharge waters from their tanks flow into a hydroponic operation as a nutrient rich base for their nearly 300,000 plants. The aquaponics farm is decoupled and holds a USDA Harmonized Gap food safety rating as well as a USDA Organic Certification. Falling Waters Farm hires labor and management from the surrounding communities, and also partners with a youth organization that helps to rebuild the lives of 400 homeless teens, alerting the organization as they are hiring so that they can direct applicants to the farm.
