FOOD & TECHNOLOGY: PART 2

FoodInk

In the last edition of TheDesigner we began a conversation about technology, design and food. We questioned whether the advancement in technology and design could be affecting our relationship with food and the experience of eating.

In the second instalment of this discussion I concentrate on 3D printing. The marvel over 3D printing is nothing new but recently it has infiltrated the food industry in a more significant way. In April 2016 at the 3D Food Printing Conference it was announced that the Dutch company byFlow (creators of portable 3D printers) had collaborated with 3D Samba and chefs Mateo Blanch and Joel Castanye from La Boscana to open Food Ink, the first ever 3D printing pop up restaurant, where not only the food is 3D-printed but all the furniture and cutlery too.

I spoke to Arthur Mamou-Mani, the FoodInk design advisor and creator of the printed furniture within the pop up. He shares his opinions on technology and food as well as discussing FoodInk and its role in advancing the culinary industry.
