Letter from the President

Happy August, SDPCA members!

I hope you are continuing to have some fun in the sun this summer.  It's so wonderful to know that no matter what else is going on in the world, we can always count on each other to show up and promote peace.

We have some exciting events planned for the next year—service projects, social events, and opportunities for advocacy. Our 2018/2019 calendar of events can now be found on our website, and this very month we have a bike ride and a Mexican wine tasting event coming up. Can’t wait to see you soon!

In Peace,
Celeste Peacock-Coleman, President
Ukraine, 05-07

MAKE YOUR VOICE HEARD!

Join your fellow SDPCA members for in-person district office meetings with your elected Representative to advocate for Peace Corps.

We are still waiting on confirmations about meeting dates and times, but we will be alerting SDPCA members in each district as soon as we have something in place. If we are unable to meet with our Reps in August, we will try to schedule meetings later in the year when the Reps are back in San Diego.

Contact Danielle at advocacy@sdpca.org if you are interested in attending your district’s meeting so that we can go as a group. We will let you know the meeting time, the office address, and more specific details about the agenda.

We will not be setting up a meeting with Darrel Issa this summer because he is not running for re-election but keep posted on other activities coming up for the 49th District!

If you have any questions, please contact Danielle at advocacy@sdpca.org.

Recipe of the Month
Red Lentil Soup
Submitted by Sharon Kennedy (originally in the NY Times)

3 tablespoons olive oil, more for drizzling
1 large onion, chopped
2 garlic cloves, minced
1 tablespoon tomato paste
1 teaspoon ground cumin
¼ teaspoon kosher salt, more to taste
¼ teaspoon ground black pepper
Pinch of ground chili powder or cayenne, more to taste
1 quart vegetable broth
2 cups water
1 cup red lentils
1 large carrot, peeled and diced
Juice of 1/2 lemon, more to taste
3 tablespoons chopped fresh cilantro
  • In a large pot, heat 3 tablespoons oil over high heat until hot and shimmering. Add onion and garlic, and sauté until golden, about 4 minutes.
  • Stir in tomato paste, cumin, salt, black pepper and chili powder or cayenne, and sauté for 2 minutes longer.
  • Add broth, 2 cups water, lentils and carrot. Bring to a simmer, then partially cover pot and turn heat to medium-low. Simmer until lentils are soft, about 30 minutes. Taste and add salt if necessary.
  • Optional: Using an immersion or regular blender or a food processor, purée half the soup then add it back to pot. Soup should be somewhat chunky.
  • Reheat soup if necessary, then stir in lemon juice and cilantro. Serve soup dusted lightly with chili powder if desired.
