I love summer get-togethers. They are casual, they are outside, and when corn is in season – they are easy! Turn on the BBQ, grab some fresh buns, buy some fresh corn on the cob and voilà! You’ve got a delicious summer supper!
Last night we had our first big corn feed. I can’t get over how spectacular that first taste of sweet corn is. There is literally nothing else like it. I’m not sure how you like your corn, but we cook it in a big pot of boiling water. Boil the water, add the corn, and let it come back to a boil. As soon as it is boiling again, turn the heat off, and take the corn out. Roll that beauty in butter, sprinkle on a little bit of salt. And make sure to eat it when it’s hot. So, so good.
In my opinion, sweet corn is one of those things that you can only justify eating when it’s in season. There’s the odd time you might see corn on the cob in the grocery store out-of-season, but that really is not the same product. The reason is that from the moment you pick corn, the sugars in the kernels start to turn to starch. If that corn had to travel any distance at all, requiring any time at all, you’re going to get a starchy corn, instead of a sweet and tender corn. At the Davison farm, we pick corn fresh every morning. This is what makes the difference. When you buy it at the farm and take it home for supper, it was picked less than twelve hours ago. So those kernels are tender, they are sweet, and they are delicious. The way corn on the cob is supposed to be.
The long weekend is coming up. Go easy on yourself. Come up to the farm, buy some fresh-picked corn, and enjoy an easy summer supper. It’s so good. And it’s not around for long.
