This week's dishes: Kale and Edamame Bean Salad, Pumpkin Curry Soup, Vegan Lasagna, Boulangere Potatoes, and Ivory Lentil Stew

Kale and Edamame Bean Salad: Shredded kale, edamame beans, red bell peppers, chopped ginger, and sesame seeds. Dressing: mangoes, ginger, and apple juice.

Pumpkin Curry Soup: Pumpkin, potatoes, tofu, vegetable broth, onions, lemon grass, curry powder, galangal, celery, yams, garlic, coconut milk, cilantro, and black sesame seeds.

Vegan Lasagna: Rice pasta, mushrooms, eggplant, spinach, tomatoes, onions, garlic, celery, tofu, cashews, vegetable broth, basil, thyme, and rosemary.

Boulangere Potatoes: Potatoes, vegetable broth, onions, garlic, shallots, no-salt seasoning, and thyme.

Ivory Lentil Stew: Ivory lentils, onions, celery, garlic, celery root, parsnips, swiss chard, and vegetable broth.
