This week, try our Chocolate Cake Recipe!! Believe it or not, it has Beetroot in it and it's Vegan!! But it's also Extra Yummy!
1 Medium Beet (cooked & purée)
1 cup of unsweetened almond/soy milk
1 cup of wholemeal flour (or all-purpose flour)
1/4 cup of canola/sunflower oil
3/4 cup of granulated sugar (or raw turbaned sugar)
2 tsp pure vanilla extract
200g of dark chocolate
1 tsp baking soda
1/2 tsp baking powder
pinch of salt
Purée the beet in a blender, slowly add the milk, oil, vanilla and melted chocolate. mix thoroughly. In another bowl, mix flour, salt, sugar, baking soda and baking powder.
Then slowly add to the batter and whisk until smooth.
Poor in a greased pan, cook for approximatively 40min at 180C or until a knife inserted in the middle comes out clean!
Let it cool down and enjoy! You can always add cocoa powder or icing on top! My favourite would be a scoop of vanilla ice-cream topped with a few raspberries and/or a raspberry coulis!
