Staff Member of the Month - Sarah Myles, Ability Links Coffs Harbour
Recipe of the Month - Sauerkraut with Polish Sausage
Ingredients:
  • 6 smoked bacon slices, cut into 5cm wide strips
  • 1 large onion, sliced
  • 1 carrot, chopped
  • 1 jar sauerkraut, rinsed, drained well
  • 2 cups dry white wine
  • 1 1/2 cups chicken stock
  • 1 tablespoon caraway seeds
  • 4 juniper berries, crushed, or 1 tablespoon gin
  • 1/2 kilo kielbasa sausage, cut into 7cm lengths
Method:
  1. Preheat oven to 150°C.
  2. Place bacon, onion and carrot in a heavy large ovenproof dutch oven over medium-high heat. Saute until onion is tender but not brown (about 5 minutes).
  3. Squeeze as much liquid from sauerkraut as possible. Add to dutch oven.
  4. Add wine, stock, carraway seeds and juniper berries. Bring to simmer. Cover, place in oven and bake for 1 hour.
  5. Add kielbasa to dutch oven, pushing into sauerkraut. Cover and bake for 1 hour. Season to taste with salt and pepper.

A big thank you to Karen Hutchendorf for kindly donating this recipe. It is a great recipe to try this month as it is in the spirit of “Octoberfest”.
 
This is a favourite, reminiscent of the version her Mum used to make, and tried and tested with ingredients available here.  It’s delicious with any style of sauerkraut and European sausage.

A message from Carol Malcolm - People and Culture
Welcome to the October edition of Connections. I attended an inspirational talk by Matt Levy, an Australian Paralympian, earlier this week. Matt spoke a lot about setting manageable goals for yourself. He said everyone has different levels of ability and it is important to develop goals that are achievable for you, break down the goal into small steps and take small steps/actions on a regular basis. These small changes will lead to significant results over time. 

Coincidentally the LAC Team Leaders forwarded me a Wellness Assessment tool  this month.  There are 6 areas of wellness on the assessment tool and I found it a really interesting exercise to complete.  I had not thought about all the different facets of wellness.   It is a great starting point for setting some new goals.  Connections will focus on one of the areas of Wellness over the next 6 months.  I hope it inspires you to set a goal and take action to achieve it. :)

Hi Everyone

How nice to see a bit of rain, very much needed by our farmers.
Although the rain is fantastic it does bring its own challenges:
driving, leaks, wet surfaces.
Please be alert and mindful of your surroundings and be extra careful.
Here are a couple of tips to remember:
  • Driving in the rain - slow down, increase the distance between vehicles, DO NOT use cruise control in wet conditions.
  • Leaks – contain the leak if possible by placing a bucket under the affected area, clean up any spills that may cause a slip hazard, place a sign on the affected area to notify others of the risk.  Notify appropriate person(s). 
  • Wet surfaces – take care when you’re out and about. Surfaces can become slippery due to the wet weather. Slow down, take your time. You might be in a hurry to get to an appointment, but taking your time won’t make a significant difference to your schedule, but it will to your safety.
Enjoy the rain but stay safe.   
Reverse Advent Calendar 
This great idea was discovered Paula Dowd. Your office will have a basket ready to go at the beginning of December. Each day items can be added. We will hand them out to local food banks or charity organisations just before Christmas. 

Yes Jo, you are allowed to set up your advent calendar very soon!
