Grand Oaks Farm

Radishes are back! Our ‘Rover’ cherry radishes are available this week along with butternut squash, red potatoes, and banana peppers.

Fresh herbs from our gardens, like oregano, sweet basil, onion chives, and sage, will enhance your culinary efforts this week. Try sage with any of the meats available at Four Seasons. Onion chives may be finely chopped and added to potatoes or egg dishes, like an omelette or frittata. Basil makes a nice pesto, yet you can also easily freeze it or dry it for use during the winter.

To dry basil or other herbs , simply remove the leaves and place them in a paper lunch bag; fold the top over twice and place the bag on the bottom shelf in the back of your refrigerator. Shake the bag weekly until the leaves are dried, which usually takes four to six weeks. Crumble the leaves, and store the dried herbs in an air-tight container in the cupboard. Use as according to your recipe when dried herbs are required.

To freeze herbs, you will need an ice cube tray. Fill each “cube” with 1 tablespoon of finely chopped or sliced herbs or with the leaves (as with thyme). Fill each ice cube well with cold water. Freeze. Once frozen, store the cubes in a labeled freezer bag or airtight container. Use the cubes in cooked, not raw, dishes as you would fresh herbs.

Remember, one tablespoon of fresh/frozen herbs equals 1 teaspoon fried herbs.
