Mills Livestock

This week we have four shank bones. These bones do not have meat and are mainly used for making beef broth. They also make a good treat for your canine friend. We also have Cross Cut Shank Bones, which have meat around the bone and are about an inch and a half thick. These are good for soups and stews.
Highlander Grogg whole bean coffee is on sale this week at $9.50 a bag, regular $10.95 a bag.

For this crisp autumn week, we are offering the third harvest of fall radishes. Try these radishes roasted in the recipe below. We will also bring more butternut squash. Fresh sage and thyme, which compliment many of the meats available in the store, will be the culinary herbs this week since the frost this week has killed the basils and other annual herbs.

The spinach and French breakfast radishes are thriving inside the hoophouse alongside the bunch onions and cabbage. We hope to provide local, fresh produce into November, but the weather will determine what will be possible.

After we finish cutting our boneless pork chops, this is the piece of pork that is left. A super lean piece of meat with a dark color. Slice into medallions or roast wrapped in bacon. Some know this cut as Catfish Tenderloin due to its shape.

The weather has turned colder. Now is the perfect time for a roast in the crockpot. Cook with vegetables and eat as a roast or slow cook and turn it into pulled pork. Either way, the bone and fat give it a flavor that is irresistible.

Have you seen all the handmade soaps at the store lately? There is NEW one this week called Citrus!  What is so special about handmade soap?  It's made with pure ingredients like olive oil, coconut oil, palm oil or locally produced lard which is much more moisturizing than the name brand soaps you find in the grocery store.  I like to use scents from essential oils or select fragrance oils along with natural textural ingredients like sesame seeds, orange peel or ground pumpkin seeds.  It is definitely a luxury item and will last longer if you keep it dry away from the stream of the shower.
This week, I put all the temporary fencing up so we can continue our rotational grazing after our fields received some much needed fertilizer.  This is the time of year to apply it so the plants will take it down into the root system to help correct the imbalance in some areas and improve our soil.  Being a sheep farmer is sometimes more about being a grass farmer if you're raising your livestock on pasture.  Our lambs and pregnant ewes will continue to graze until mid December if the weather cooperates.
