In the past we have also offered onions.  Unfortunately the Leek Moth has devastated onion crops across Vermont this season so our farmers do not have the onion supply they have had in past years.

Storing Winter Vegetables

We have quite a bit of info on our website about storing root vegetables and winter squash.  

In addition, here is some info on Root Cellaring from Muddy Boots CSA Member Richard Czaplinski.
Until the middle of the last century, most houses in Vermont were built with a root cellar.  And, that trend is seeing a resurgence.  Whether you have an official root cellar or just want to store some Muddy Boots produce for later in the winter, it helps to understand the principles underlying this age-old art. 

Richard Czaplinski, a Muddy Boots member and resident of Warren, penned an easy to read six-page booklet titled, Root Cellaring & Food Storage in Vermont: Why and How to Do it.
