Heritage Breed Turkey Preparation

For those of you purchasing our heritage breed turkeys this year, this is Cheryl's suggested roasting method:

Separate skin from the breast meat and rub meat with butter or olive oil. Place some sage, thyme and rosemary sprigs under the skin. If you're not stuffing the turkey, I suggest currind and orange and lemon to put in the cavity, along with more of the same herbs. Salt and pepper to taste.

Place your bird breast side down in roasting pan. Put in oven preheated to 400 degrees for 20 minutes. Reduce temp to 325, add stock or water to the pan and Roast 15 minutes per pound until thigh temperature reaches 150 to 155 degrees. When desired temp is reached pull from the oven. Legs will need a little more time, so cut them off and return to oven for about 10 to 15 minutes. Tent the bird loosely to rest while legs finish cooking.

The couple of extra steps are so worth it for the delicious flavors this turkey will give you. Enjoy and Happy Thanksgiving!!
