NEWSLETTER EXCLUSIVE:
MATCHA WHITE HOT CHOCOLATE RECIPE
It's my sneaky suspicion that a lot of pastry chefs only love matcha powder for its color. An I don't blame them! It's hard to find something so naturally, crazily green that's not a salad leaf or kiwi—neither or which are particularly versatile in baked goods.
I personally love matcha for another reason, too: the leaf's tannic bitterness is such a wonderful contrast to sweet dairy. This makes it ideal for pairing with white chocolate, which is often way too overtly sugary and thick without any of the tempering effects of cocoa.
In this hot chocolate recipe, I like to take things one step further and use my new favorite non-dairy milk, Milkadamia, as the base. It's ridiculously decadent on its own, and when you add white chocolate—whoa, nelly.
Use whatever milk you prefer, just note that if you're going with O.G. cow milk, you'll probably want a splash of vanilla extract in there too.
Oh, and please use real block white chocolate for this recipe, too, not chips—trust a pro, it melts more easily and also chops more easily than the dark stuff!
Cheers!
