It’s kind of a good thing that February is the shortest month because, by and large, no one is aching for more February, you know? Yes, there’s Valentine’s Dayfor those who are into thator perhaps you have a birthday or something. After that, wishing February would stretch longer seems somewhat baffling.

But here we are! And while winter has us in its jaws, we’re going to make the comforting, hearty foods that we love. Here’s what's on the docket for this week:
Let’s start off the week with something truly easy and low-key. A fabulous chicken sausage sub, with a mess of sautéed greens tucked inside. If not everyone in your family will go for the greens, maybe some sautéed peppers and onions? An all-in-one sandwich.

Once upon a time, rotisserie chickens weren't in every supermarket in the landand the smell of roasted chicken filled the air in home kitchens far and wide. If you want to skip the extras and just give the chicken a rub with butter and a sprinkle of salt, you will still have a perfect roast chicken (and bragging rights). Serve it with Sautéed Kale and Brussels Sprouts with Bacon (which, if it were up to me, might be the entire meal).

Do NOT skip this one! Picadillo is a Latin American dish similar to hash, containing ground meat of some sort (here I picked turkey), and a medley of vegetables. You can serve it on its own, add it to a stew, or warm up some tortillas in a skillet and let people make messy tacos with the mixture. A really good jumble of flavors.

Listen, a jar of hoisin sauce is the only even slightly nonstandard pantry item in this recipe, and if you buy one for a few bucks, your stir-fries and other Asian dishes, not to mention this super-easy salmon recipe, will be the better for it. Serve with rice, couscous, or quinoaand a salad. Done and done.

You’ve made it to the Friday section? Love you, babe. And if you’re still cooking, you might feel like you deserve a splurgey filet and some fabulous sidekick vegetables. Just tack on some roasted potatoes or mashed potatoes (maybe with cheese?) and you will have created a well-deserved end-of-the-week meal (wine not included).
