Honoring Black History

February is Black History Month.  In the spirit of Black History Month, please see this article about Carter G. Woodson, the “Father of Black History”.  While Black History Month is a time to honor and learn about the History of African Americans, it is important to continue throughout the year.

There is a wonderful organization right here in Phoenix called Tiger Mountain Foundation.  They have an awesome community garden, in which South Phoenix residents plant and grow their own food. The organization also sells their organic produce at Farmers Markets around the valley for a donation, which goes directly back to the Foundation.  Please click on Tiger Mountain Foundation for more information.

Sweet Treat Idea

Chocolate Covered Strawberries are a great Valentine’s treat.  The easiest way is to melt your favorite chocolate chips (can use dark chocolate, dairy free, or Enjoy Life brand for soy, dairy and nut free) in a double boiler (or just a glass or stainless steel bowl over a pot with simmering water).  Wash and dry your strawberries (organic preferably), dip them in the melted chocolate and place on parchment paper.  They firm up in about an hour in the refrigerator.
