The Difference of Italian Made Pasta
As we begin to get a preview with some warm spring type of days, we again shift our diets usually to something that is maybe a little lighter for when it is hot out, or maybe something that won't result in a sleepy feeling afterward. While most Italian meals are prepared in a way that you don't feel weighed down at the end, sometimes we get the question of how pasta can be one of these 'lighter' meals.
The answer is in the flour, and not so much what goes on the pasta after cooking, but rather the source of the ingredients. If you grew up in Europe, you may already be familiar with more finely milled flours classified as 00 or similar. Simply put, it is a measure of how fine the grain is milled, with 00 being the most fine on the scale, and 2 being on the high end..
What does this mean for you? If you have never had an Italian made pasta, we first of all suggest you come by our market and try a sample. Otherwise you might already know that products made with a more fine flour, such as a 00 Caputo, are a lot more delicate, and easier to digest than something made with a more industrial flour. Additionally, the gluten ratio of pasta made with Caputo flour is at a point where it provides the perfect texture for this more delicate pasta.
