Aprons on: Griddle on - Its time for Welsh Cakes!

St David's Day is this Thursday 1st March and the best way to celebrate is to savour the wonderful aroma and taste of welsh cakes, warm and delicious straight from the griddle. 

My recipe has a spicy twist that adds something extra to these small Celtic circles of joy

Welshcakes !!!!!
 
 
175 g SR flour
1 teasp baking powder
80 g butter
50 g grated cheddar
50 g finely chopped black olives
1 egg
½ teasp dried thyme
50 g chopped pancetta or lardons
¼  teasp cayenne
½ teasp cumin
  • Heat a griddle very slowly and lightly butter
  • Fry off the bacon in a dry pan until crisp.  Tip it out onto a chopping board and chop finely.
  • Mix the butter and the flour until it resembles fine breadcrumbs. Add the cheese and the rest of the dry ingredients. Add the egg and maybe a little milk to bind.
  • Roll out to 5 mm thick and cut out into or rounds using a 3 cm crinkled cutter.
  • Cook on the maen or griddle for about 3 minutes on each side.
