Welshcakes !!!!!
175 g SR flour
1 teasp baking powder
80 g butter
50 g grated cheddar
50 g finely chopped black olives
1 egg
½ teasp dried thyme
50 g chopped pancetta or lardons
¼ teasp cayenne
½ teasp cumin

- Heat a griddle very slowly and lightly butter
- Fry off the bacon in a dry pan until crisp. Tip it out onto a chopping board and chop finely.
- Mix the butter and the flour until it resembles fine breadcrumbs. Add the cheese and the rest of the dry ingredients. Add the egg and maybe a little milk to bind.
- Roll out to 5 mm thick and cut out into or rounds using a 3 cm crinkled cutter.
- Cook on the maen or griddle for about 3 minutes on each side.
