The Outdoors
Spring ephemerals are just around the corner! The term ephemeral, meaning "fleeting" or "short-lived," refers to spring perennials that grow, bloom, and set seed before the trees fully leaf out. As the ground warms and the days lengthen, the spring ephemerals will begin to emerge in April and will stick around for only a few weeks. Hit the trails at Hartman to witness the fleeting beauty of Dutchman's breeches (above), trout lilies, trillium, Virginia bluebells, and more, such as the flowers below (clockwise from upper left): Hepatica, Wild Ginger, Dutchman's Breeches, Shooting Star. Did you know?
The spring wildflowers have arrived and so have all of the tender greens that have tremendous health benefits. Some great resources for identification and preparation include Sam Thayer's edible book series and Green Deane's "Eat the Weeds" video series on YouTube.
An example of a common edible is Purslane (Portulaca oleracea) (above), a common "weed" that many people will probably recognize. What most people don't know is that is has three times more omega fatty acids than the greens you find in your grocery aisle. They also contain 2.5% protein and seven times more beta carotene than carrots, among so many other nutritional benefits.
