Power Dates
Easy to make. No bake. No waiting. A perfect date! 
Sometimes we just need a little energy boost! Try our recipe for Power Dates. These simple date balls are packed with protein, fibre, natural energy, are vegan, and can be made gluten-free. They're versatile enough to eat for breakfast, lunch, and of course they're great for snacking, right out of the fridge.

INGREDIENTS
• 4 cups medjool dates (pitted and chopped)
• 4 cups oats (we use gluten free oats)
• 1/4 cup maple syrup 
• 1/4 cup flax
• 1/4 cup chopped freeze dried sweet cherries
• 1/4 cup peanut butter (or any nut butter)
• Fine coconut or ground freeze-dried raspberries

PREPARATION INSTRUCTIONS

Soften medjool dates over warm heat with a little bit of water. Stir until they form a thick paste and blend  together. Take off heat, and add syrup, peanut butter, dried cherries, flax, and add the oats slowly while stirring to blend into the mix.

Once you have a very thick consistency; and you may even need to use your hands to blend as the mix will be very stick, then scoop out a small amount of mix.

Roll into balls about 1.5" in diameter.

Quickly roll the balls in fine ground coconut; or ground dried raspberry mix. Be adventurous and roll in your favourite coating - ground nuts; even chocolate!

Let them set at room temperature for an hour, or put in the fridge if you like them a little firmer.
