Riwaka Fresh Hop Sour


These Riwaka hops have been on a real journey - picked fresh at Mac Hops in Motueka, then flown across the Tasman in a tiny Sounds Air plane, a short drive from Wellington Airport to our Lyall Bay Brewery and poured directly into the brew of our newest member of the Microflora Specimen series.
 
A pale malt base was soured with Lactobacillus in the kettle while we collected 400kg of fresh Riwaka whole cone hops straight off the bines at Mac Hops farm in Motueka. We then flew the hops back across the strait to Lyall Bay so that they were as fresh / green as possible and steeped them in the soured and boiled wort in the mash tun. The result is a beer which is tart, dry and loaded with fresh Riwaka oils, resins and grapefruit / passionfruit characters.
