2 Lemons
3 Tbsp Olive Oil
1 tsp Raw Sugar*
7 Carrots
1/2 Bunch of Flat Leaf Parsley
Juice the lemons and strain out the seeds.
Combine lemon juice, olive oil, and sugar in a glass.
Peel and shred the carrots. **
Chop the parsley.
Put carrots and parsley in a big bowl.
Whisk up the dressing.
Mix it all together.
*This is the first recipe we've shared that contains sugar. A single teaspoon. In general, we don't add sugar to anything that isn't a treat, but Leigh Ann made an exception for this one. If you try it without, let us know how it tastes!
**We use a food processor, but you could also use a box grater and a lot of willpower.
