SAKE TASTING

OK, most important thing first.  Due to a misunderstanding with our importer, the Ohyama sake tasting that we've been telling everyone is scheduled for this Friday (08/05), is actually scheduled for this SATURDAY (08/06)! Our apologies for the confusion and any inconvenience this may have caused.  Now that we've cleared that up ... ONWARD!

For summer last year we brought in a seasonal namazake from Ohyama.  "Ohyama Nama" was a big hit with everyone and of course we brought it back again this summer.  With the popularity of Ohyama's namazake, we thought our customers might want to sample more sake from this wonderful brewery.  Thanks to our importer (Japan Prestige Sake Association) we're doing just that by hosting Mr. Yoshiaki Kato and his Ohyama sake this Saturday at the shop.

Please join us this Saturday (08/06) for our Ohyama Sake Tasting from 5pm to 8pm.  We will be sampling SIX different sake from Ohyama brewery including a FIRST TIME TO THE US Ginrei Ki-Ippon Junmai Daiginjo!

Here's the lineup.   

 

Ohyama Tokubetsu Junmai

OHYAMA
TOKUBETSU JUNMAI

Light and smooth with clean aromas of fruit and grain. This sake has a round mild sweetness that is nicely balanced with a pleasant acidity.  Finishes dry and crisp.  

 

Ohyama Ginsuika
 

OHYAMA GINSUIKA
JUNMAI GINJO

Well balanced aromas of marshmallow, pear and flowers. Elegant sweetness with  a fine acidity makes this sake very refreshing and easy to drink.

 

Oyahma Nama

OHYAMA NAMAZAKE
TOKUBETSU JUNMAI 

Everyone loved this at last month's Summer Namazake tasting so why not try it again.  This unpasteurized sake is light and refreshing with the flavors of peach and apple and a medium dry finish.  Perfect for summer! 


 

Ohyama Nigori

 OHYAMA NIGORI
TOKUBETSU JUNMAI

One of our favorite Nigorizake because of it's dry finish. This nigori drinks light and clean with the aroma of apple and pear.  As with all nigorizake, this sake contains bits of unfermented rice particles that give it a nice texture on the tongue.  It finishes dry with a slight ricey flavor.

 

Ohyama Fu-in

JUNMAI GINJO

Some of you who have tried Tsukasabotan's Fu-in might be doing a double take right now.  Ohyama Fu-in looks just like Tsukasabotan but it comes in a red bag instead of a black one.  This Ohyama Fu-in sake and Tsukasabotan's Fu-in are custom sake made ONLY for Japan Prestige Sake Association.

OHYAMA GINREI KI-IPPON
JUNMAI DAIGINJO

FIRST TIME IN THE UNITED STATES! Flavorful sake filled with fruity aromas of apple and pear combined with almonds and mineral.  Mild but expansive sweet flavor balanced with a crisp acidity and viscous texture. Peppermint finish.

So please stop by the shop this Saturday for some Ohyama sake.  Meet Mr. Kato from Kato Kahachiro Brewery and sample some of his sake. We'll be sampling until 8pm or until we run out of sake so come early.  Hope to see you there.

Ohyama sake is made by Kato Kahachiro Brewery and is named after a town in Yamagata called "Ohyama-cho" where the sake brewery is located.  Ohyama means "Big Mountain", which is why it's no surprise that the town of Ohyama-cho is located near a VERY BIG MOUNTAIN called Mount Chokai.

The Ohyama district is famous for being the top sake brewing area in Eastern Japan since the Edo period. Originally there were over 40 sake breweries in the area, but most of them were destroyed in a large fire in 1884.

Currently only 4 breweries continue to brew sake in the area, with Kato Kahachiro brewery and it's Ohyama sake being the most well known. Kato Kahachiro brewery was founded way back in 1872, making it well over 100 years old.

Automatic Mash Mixer


Besides making delicious sake, Kato Kahachiro Brewery is also known as the inventor of some very interesting sake brewing equipment.

All of this equipment was created "in house" which allowed them to create modern machines that to some degree still followed their traditional methods.

They invented an automatic mash mixing machine that allows the brewmaster to easily control the duration time, speed, and strength when mixing the mash.  This was the first of it's kind in Japan.

They also created an automatic fermentation machine with a natural convection system and a koji making machine that was much easier to control than other machines.

As a result of this innovation, Kato Kahachiro Brewery is able to stabilize the quality of their sake much easier and brew it more accurately and efficiently

Ohyama's sake rice is grown in the Shonai fields surrounded by the majestic Mount Chokai and the Dewa and Asahi mountains.  The area is blessed with an abu
ndance of clean water and rich fertile soil.

Normally I'll post a picture of the brewery representative who is coming to the shop.  Usually I get it from the importer or find it on the Internet.  

This time we are hosting Mr. Yoshiaki Kato, son of the current owner.  Try as I might I was unable to find a picture of him.

So you'll just have to stop by this Saturday night if you want to find out what Mr. Kato looks like.

Parking
Metered parking available on King Street, Kaheka Street & Liona Street.  Pay lot located behind our building ($2 for 1/2 hour), enter from Liona Street.  We regret to inform you that parking is no longer free in the back lot in the evenings and on the weekends. They have set up a pay box that charges $2 for 5 hours when the lot is unattended.
