Student Supporter Program Now Available

The Student Supporter gains access to the standard member discounts and monthly specials in addition to special student member-only programs and promotions. As a participant in the student co-op supporter network, each Student Supporter will have a voice in co-op programs and policies and will be eligible to run for the student position on the co-op board. The monthly newsletter and other communications on store specials, community happenings, and local and organic food news will be made available to the Student Supporter. The Student Supporter fee is $20 per year.

Fresh sweet cornWe're getting a continuous delivery of sweet corn, tomatoes, green beans, squash, cucumber, and onions. Wildflowers and gladiolas are here, too. King Harvest has surely come.

Welcome, Closet 2 Closet!

Closet 2 Closet is now open within our building. We offer a warm welcome and best wishes for success. Come and check out their wares. Their hours are 10 am to 6 pm on Thursdays, Fridays, and Saturdays.

Bulk Sales Available Soon!

The plumbing plan has been officially approved by the state inspectors. The plumbing associated with the new sinks is being done. When the plumbing is completed, the bulk sales will commence. We have an extensive list of bulk items identified and posted in the front store window. Please review the list and provide us with the names of bulk items that you want to see.

Season for Salade Nicoise

With all the fresh produce available, August is a great time for this dish. Minnesota Street Market has virtually all the ingredients for this recipe. The following includes the salad and dressing. Enjoy!

Salade Nicoise
(from The Silver Palate Cookbook)
6–8 servings

8 new potatoes (about 1 pound), well scrubbed
2 pounds green beans, cooked
10 very ripe Italian plum tomatoes, washed and quartered
1 small purple onion, peeled and thinly sliced
½ cup Nicoise (or other) olives
¼ cup chopped Italian parsley
Pinch of salt
1 teaspoon freshly ground black pepper
6 hard-boiled eggs, shelled and quartered
12 ounces canned tuna packed in olive oil (or other oil if you can’t find olive oil-packed, but olive oil is tastier), well drained
2 ounces anchovy fillets (optional)
¾ cup Our Favorite Dressing (see below)
  1. Cook potatoes in boiling salted water until tender but not mushy, about 10 minutes. When cool enough to handle, quarter the potatoes and transfer them to a large bowl.
  2. Add green beans, tomatoes, onion, olives, parsley, a pinch of salt, and the pepper. Pour ½ cup of the dressing over the vegetables and toss gently but well.
  3. Transfer mixture to a large serving platter. Arrange the hard-cooked egg quarters around the edge of the platter. Flake the tuna over the salad and arrange the anchovy fillets, if you use them, in a lattice pattern over the tuna. Drizzle with additional vinaigrette and serve at room temperature.
Our Favorite Dressing
(from The Silver Palate Cookbook)
1 cup

1 tablespoon prepared Dijon-style mustard
4 tablespoons red wine vinegar
1 teaspoon granulated sugar
½ teaspoon salt
½ teaspoon freshly ground pepper
Minced parsley and/or snipped fresh chives, to taste
  1. Measure mustard into a bowl. Whisk in vinegar, sugar, salt, pepper and herbs to taste.
  2. Continue to whisk mixture while slowly dribbling in olive oil until mixture thickens. Adjust seasoning to taste. Cover until ready to use. (Vinaigrette is best if made just before it is to be used.) If necessary, whisk again before serving.
To tickle your pickle pleasures, we have fresh dill available. Drop in to the co-op to pick up some dill with other produce items.

Keep fruit flies at bay
These summer days of leaving out tomatoes to ripen on the counter can often bring fruit flies. Refrigeration is not a good option since it can impede ripening, hinder flavor, and affect juiciness. But according to food editor Melissa Clark, you can avoid pesky fruit fly invasions simply by covering fruit and tomatoes with a clean, cotton tea towel!
