Jerk Turkey with Pineapple Salsa

We say go big or go home! Why limit yourself to a small bird when it comes to something as delicious as this Jerk Turkey with Pineapple Salsa? Our Jerk Seasoning is incredible on turkey and if you dry-brine the bird overnight, even better! Ginger, allspice and thyme habanero infuse the meat with Caribbean flair. Spatchcock the turkey for fast, even cooking and enjoy moist and flavorful meat. You can make this bright and flavorful salsa with items fresh from the refrigerator or quickly char the pineapple and peppers on a very hot grill first to sear the edges. Be sure not to overcook! Get the pieces on and off the grill in just a couple of minutes to cook the outside but preserve the fresh texture and flavor. Jerk Pineapple Salsa pairs well with fish tacos and jerk seasoned meats or stands alone as a snack with chips.

Dukkah Scones

I love reinventing the scone with new flavors, especially savory ones. Dukkah is an exotic spice blend, traditionally used as a dip for bread with olive oil. In these scones, it adds just a hint of hazelnut and a bold boost of cumin and coriander, plus some herbal accents. Fresh dill and shaved Parmesan round out the flavor profile, with a touch of flaky smoked salt on top. These hearty Dukkah Scones are wonderful for brunch, snacking or in a weekday lunch box.
