Chicken CSA Shares Still Available!

Thank you all so much but we are officially sold out of individual Chickens in the freezer until the end of June! We are still taking pre-orders for our Chicken CSA program set to begin distribution in late June.

Don’t get stuck late next Spring without a few chickens in your freezer…

Now is a great time to take advantage of pre-purchasing your year’s worth of chicken through out Chicken CSA Program.

Half Share – 3 chickens received per month for 3 months starting after June 17

Full Share – 3 chickens received per month for 6 months starting after June 17

The chicken CSA allows us to raise the money necessary to grow all of the chickens while the pasture is growing and the weather is suitable. By investing in your years’ worth of chicken you are investing in us, our commitment to local, quality and healthy food all while saving money off the standard individual chicken prices through the rest of the year!

COVID 19 Safety Statement
Due to the spread of the novel corona-virus we will continue only accepting orders through our website to be picked up at scheduled pickup times and locations. All orders will continue to be prepackaged as they are received in order to minimize handling. All payments will be processed through our website or individual invoice. Orders will be transported in coolers that are sterilized prior to loading as well as before returning to the farm to ensure the bio-security levels we need to be able to continue to make healthy, pasture raised meat available to you.
A brief overview about how our hogs are raised…
Rotationally grazed in paddocks. Supplemented with locally sourced, complete nutrient feed to ensure healthy growth. You can see the progress of paddocks that have been grazed and are now recovering in the aerial shot below from several summers ago.
Just before pigs are set to rotate out of a paddock we broadcast a diverse set of cover crops each with different goals. Some of what is planted is specifically for forage, others are aimed at continually improving our soil while some others are aimed at luring beneficial organism like bees! You can see in the picture above the many species that are planted and ultimately create a thriving system together.
Free-farrow – unassisted, no cages or farrowing crates (farrowing is when a mother pig has babies!). Sows will build incredibly crafted nests out in the open in the summer and in open shelters in their pastures during the winter months. We let their instincts thrive!
Piglets remain on sows for 6-8 weeks as opposed to 14-21 days  when most piglets are weaned in larger commercial operations. Typically, Momma pig is sick of the large number (our average litter is 9-12 piglets!) of needy young ones by this time and the piglets have naturally transitioned away from needing milk from the sow. Weaned piglets are put into weaning pens where we teach them about the electric fence. Once trained (about a week or two) they can be contained in their larger paddocks with a single strand of hot wire!
In the winter the pigs are fed hay (yes pigs eat hay too!) in order to replace the dormant pasture of Western South Dakota in their diet.

New Recipe!!!

Side Pork Wrapped Pork Chops!
These wrapped thick-cut pork chops are rich with flavor and are sure to fill you up!

If you haven’t tried our side pork (or our pork chops for that matter) you are in for a real treat! These thick cut pork chops have incredibly savory taste and texture with a beautiful fat cap and the side pork adds a sweetness and crunch to make for a flavor-packed bite every time!
Sliced side pork. Check.
Thick cut (1.5") pork chops? Yes, please.
Generous serving of BBQ sauce slathered all over the chops.
All wrapped up and baked at 350F
Broil for 10-12 minutes to crisp the side pork and enjoy!
Ingredients:
2 – thick cut pasture raised pork chops
1 – package of sliced pasture raised side pork
12oz of your favorite BBQ sauce
 
Instructions:
 
1. Preheat oven to 350 F
2. Slather all sides of pork chops with BBQ sauce
3. Wrap side pork around pork chops and secure in place with toothpicks
4. Cook on rack elevated over baking pan to catch drippings approx.. 30-35min to internal temperature of 130 F
5. Place directly under broiler for 10-12minutes until side pork wrapping is crispy
