**These “ribs” are also great for stews and kebabs, or when you need just a little bit of pork for a stir-fry. The best part about these ribs is that they can withstand low, slow cooking like braising, or, since they’re cut into such small pieces, can be cooked quickly over high, direct heat like grilling
***A rich flavored "cold cut", reminiscent of the hills of the Parma Region of Italy. Pair it with an aged Smoked Gouda and a cold beer or a Chardonnay. Typical Salami is dry cured. The "Cotto" means "cooked". The recipe reflects an old world Italian recipe for a dry cured version, however due to being Federally Inspected, we can't have a ready to eat product without cooking it to a terminal temperature. This is a ready to eat product. (Ingredients: Shannon Family Farms Pork, Lick Creek Farm Beef, water, salt, sugar, powdered vinegar, cracked black pepper, celery juice powder, cherry juice powder, spices.
