Ensaimada — Brioche was first introduced to the Philippines via Mallorca, Spain. We loved and adapted it and we called it “ensaimada”. Pastry rich in eggs, butter and aged cheese, it is a favourite celebration pastry usually served with thick chocolate sauce for brunch or mid-afternoon snack.
