Simple Sourdough


Are you interested in joining an online sourdough class? Exclusive to newsletter readers only!

In this class, you'll build a sourdough starter from scratch and bake your first loaf. Split over several sessions, this is the perfect time to try making sourdough. 

We'll start with a couple of 15 minute sessions to get your sourdough starter going. Then, we'll soak, mix and stretch the dough before it is left overnight before baking. 

Limited to 6 places only. Let me know if you are interested to attend sessions on 18 (15 minutes), 22 (15 minutes and 30 minutes)  and 23 June (30 minutes). You do not need to be located in the UK to join in. Please email me if you are interested and I will invoice you. You will need to take part in all the sessions.

Time to try raising with raisins

Apologies for the awful pun. In the spirit of trying something new, a group of women bakers got together and experimented with fermenting raisins and using that water to make bread. It worked! Since then we've tried other fruits which have mostly been successful as you'll see from my fermented figs above. 

Have a go yourself! After 4 days, you'll have something to raise a loaf with. Read more. 

 

Where to buy flour


A quick update this month as it is getting far easier to get flour delivered. Can I suggest you get a bit more choosy about what you buy? Avoid the very strong Canadian flour and buy flour raised from wheat grown in the British Isles. I've updated my blog post on where to purchase flour .

If you are thinking of buying French flour for your French baking, learn the Type numbers mean. 
 
Belazu Feast

Virtual Dinner Parties and Michelin starred cooking at home

I am a huge fan of Belazu products - I'll bet you've got at least one on your kitchen (rose harissa or preserved lemons perhaps?). I took part in a virtual dinner party on Zoom in aid of Chefs in Schools. Six top chefs created recipes including Ottolenghi, Angela Hartnett and Thomasina Myers. We cooked along with ingredients supplied to us in advance - including a cocktail from Mr Lyan. It was fast, furious, tasty and fun. £60,000 was raised for Chefs in Schools. I particularly enjoyed the sneak view of the chefs kitchens! The good news is that Belazu are holding a series of virtual masterclasses in the coming weeks.

Two Michelin starred chefs have now started offering their dishes that you can have delivered at home, Adam Hambling in London and Josh Eggleton near Bristol. Josh Eggleton's first cook along is on 19 June, whilst Adam's meals are available for delivery every Friday dubbed "cooked by me and served by you". 
Pesky Fish Scallops

It's all a bit fishy


Ordering fish online has never been easier! I've now tried several different suppliers. It arrives far fresher than what you'll find in the supermarket and some even have eco packaging. We had the most incredible hand dived scallops from Pesky this week. From lobster to mussels there is something for everyone!

National Cream Tea Day


National Cream Tea Day is going virtual on 26 June! Time to show off your scone making skills and host a tea party remotely with your friends. (Try my scone recipe) and should you wish, donate to your favourite charity.
