Georgia growing season has two major planting periods:

Spring: Planted March to May. Harvested in June & July.

Fall: Planted July to September. Harvested in October to December.

This month while enjoying the harvest season bounty....
Kitchen & Pantry: Be certain to preserve the bounty to last all winter until next summer 2021.

Indoor activity: Begin to gather seeds to start for your fall garden! Choose organic, heirloom fall varieties to save viable seeds from your harvest.

Fall is the time for lettuce, spinach, collards, mustard greens and kale. There are so many varieties of delicious lettuces, you couldn’t possibly grow them all!

Make a Custom Planting Chart for your seeds: In order to calculate the planting date, determine the frost date and count back the number of days to maturity plus 18 days for harvest of the crop. If snap beans mature in 55 days and our frost date is November 15, we should plant on or before September 3. UGA Planting chart here.

 

July
Start planning the fall garden.
Plant the following vegetables not later than July 20 to allow time to mature before frost: tomatoes, okra, corn, pole beans and lima beans. Also plant cucumbers, squash and snap beans.
Plant your superfood pumpkins and winter squash - acorn, butternut


 
August
Plant the following no later than:
August 15: Snap beans and Irish potatoes (seed can be sprouted two to three weeks before planting).
August 31: Cucumbers and squash; plant varieties resistant to downy mildew.

Start plants for beets, broccoli, cabbage, carrots, collards, lettuce, mustard, onions, radishes, spinach and turnips in a half-shaded area for setting out in September.

September
Transplant the following: beets, broccoli, cabbage, carrots, collards, lettuce, mustard, onions, radishes, spinach and turnips.
Plant your second planting of fall crops such as collards, turnips, cabbage, mustard and kale.

Dried foods—when kept dry—remain edible virtually forever.
Dehydrating is one of the best ways to preserve food for long term storage. 



Dehydrating requires less energy
than canning or freezing, and if stored properly,
dehydrated foods will last for many years.



Soup is a perfect way to use dehydrated veggies,
since the vegetables need to be rehydrated before eating.



A favorite to dehydrate is tomatoes.  
If stored properly, dehydrated tomatoes can last many years.  Soups are delicious with rehydrated tomatoes.

1/2 cup portions  of Dehydrated Veggies 
may be stored chopped or ground in freezer bags or jars
to heat and rehydrate in the main meal
or add ground powder to smoothies.



You will get better results and retain more nutrients
dehydrating vegetables & fruits that are fresh or frozen.

 We dehydrate frozen berries
including wild blueberries, strawberries,
blackberries and raspberries

for granola trail mix and energy snacks.

including Apples, Peaches, Pears, Pineapple, Grapes, Plums, Apricots.


Peak Season Bounty:   When fruit drying is performed during the peak season for your chosen fruit, you’ll be dehydrating different fruits at different times of the year.  Grapes, strawberries, and peaches all have different peak seasons.
 
Lemon Juice Soak:  For a few fruits, such as apples, strawberries and bananas, you should spray the slices with lemon juice to prevent browning and assure no bacterial growth while in the  drying process




To make fruit leather, mashed potatoes or sauces
you will need a silicone or nonstick liner.
Non-stick sheets are reusable and work better than parchment paper.
Never use wax paper for fruit leathers.  It melts.

 





Quick, Healthy, Home-Prepared Travel Meals 
Skip Fast Food

(Keep these dried meals in each family member's back pack for travel and day-hiking. Plus a Stainless Steel thermos.)

After breakfast, boil water and add it to dried ingredient back-pack meals (like soups) in thermos.
  If you don't want to clean thermos, use disposable liner quart-size freezer bags.
Your hot lunch will be ready with no need for take-out fast food.

9-Trays of Strawberries for Excalibur Dehydrator

When dehydrating fruits, you want to soak them first in a solution that will limit bacteria and keep the fruit from becoming too dark. You can use a citric acid solution or a mix of half lemon juice and half water. Commonly dried fruits include apples, grapes, plums, pineapple, pears, figs, apricots, berries, bananas, cherries and peaches, although you can dry other fruits, like melons, as well. You can also spread pureed fruits on trays and dehydrate the puree into fruit leather. Dried fruits can be added to salads, trail mix, granola or main dishes or reconstituted and used in fruit desserts like cobblers and crisps. Once dehydrated, fruits will be leathery in texture but still pliable.  Source.




 
UGA Conditioning Steps
 
Conditioning is the process used to equalize the moisture. It reduces the risk of mold growth.
To condition the fruit, take the dried fruit that has cooled and pack it loosely in plastic or glass jars. Seal the containers and let them stand for 7 to 10 days. The excess moisture in some pieces will be absorbed by the drier pieces. Shake the jars daily to separate the pieces and check the moisture condensation. Glass containers are excellent for storage because any moisture that collects on the inside can be seen easily. If condensation develops in the jar, return the fruit to the dehydrator for more drying. After conditioning, package and store the fruit as described above. Source.

Fortunately, drying is one of the best food preservation methods due to its

high retention of essential nutrients.


 

 
Bananas can be frozen and dehydrated, but are not supposed to be canned or placed in cold storage.
Apples can be dehydrated well and placed in a cold storage.
For berries, they can be frozen, dehydrated, or made into jam.

Drying or dehydrating your food is probably the best option when you have limited storage space. Dried or dehydrated food will take up the least amount of room and will store the longest.







Dehydrated Tomatoes.
Preserve dry or in oil for pasta, rice or veggie dishes.

Are food deliveries and groceries safe during pandemic? Yes, experts say.  First, the good news: The virus is not likely to be transmitted by food itself.

There are many exceptions to the “shelter in place” order, allowing residents to leave their homes. Those essential actions include obtaining groceries, medication, outdoor exercise and work-related responsibilities. Restaurants will also still be able to offer takeout and delivery services, but dine-in services must cease.

Contactless convenient deliveries assures your farm veggie box is left on a porch or at a doorstep. Please tape cash or check to front door or other. You receive a courtesy text alert when your farm veggie box has been delivered.

Crowds full of people that can cough or sneeze or spread their germs on grocery carts and checkout lines. That's part of why social distancing has been encouraged and part of the reason grocery box stores can be a problem.

“There is a very slim chance or almost none that the virus is going to be present in the food. There is no evidence it is transmitted through fresh produce," he adds. Francisco Diez-Gonzalez, director of the Center for Food Safety at the University of Georgia. “We’re quickly trying to respond.” He notes a virologist is on staff gathering data specific to coronavirus.

Cook Food - to the proper temperature.
“The virus is very sensitive to cooking,” Diez-Gonzalez says. “Heat is going to kill it very easily.” Use a digital thermometer, and check against the government’s safe minimum cooking temperature chart. The transmission through foods is not possible if the foods are cooked properly since coronaviruses are inactivated by heat. Source.

Cleaning surfaces is also important. “As with any food safety measures, you should always wash your hands before, during, and after food preparation and before you eat any foods,” Ilic said. “Additionally, you should be sure to carefully wash any surfaces used for food preparation.”

Yes, experts say.  First, the good news: The virus is not likely to be transmitted by food itself, said Dr. Ian Williams, chief of the Outbreak Response and Prevention Branch of the US Centers for Disease Control and Prevention, which investigates foodborne and waterborne illnesses.

Digestive Science - on Virus and our Windpipe

Even if the virus gets into your mouth, drinking water or other liquids will wash them down through your throat and into the stomach. Once there, your stomach acid will kill all the virus. If, however, virus enters your windpipe through nose or mouth and then into the lungs, that’s very dangerous. So, even if you did eat food with the virus, there are not many receptors in the digestive track for the virus to cling to, so swallowing the virus would not likely lead to contracting the illness.In other words, your digestive system would get rid of it, Williams said. Drink fresh water often.

Packaging - Whole Farm Foods
"While it's possible that the virus gets deposited [on packaging] we have no indication from epidemiology or the literature that this is a risk factor for Covid-19 or other respiratory illnesses," Chapman said. The US Food and Drug Administration echoed that sentiment, saying it's not aware of any reports suggesting Covid-19 can be transmitted by food or food packaging.


USDA  - Farm Veggie Safety
There have been no reports of this food contamination with coronavirus. As of this time, the U.S. Department of Agriculture, is unaware of any instances suggesting that coronavirus, COVID-19, has been transmitted by foods. This includes meats, fruits, and vegetables. Moreover, the USDA has created a website dedicated to answering questions regarding food, food safety, and COVID-19.

Q: Are food products produced in the United States a risk for the spread of COVID-19?

  • A: There is no evidence to suggest that food produced in the United States can transmit COVID-19.

Q: Can I become sick with coronavirus (COVID-19) from food?

  • A: We are not aware of any reports at this time of human illnesses that suggest COVID-19 can be transmitted by food or food packaging. However, it is always important to follow good hygiene practices (i.e., wash hands and surfaces often, separate raw meat from other foods, cook to the right temperature, and refrigerate foods promptly) when handling or preparing foods.

Bottom Line - Whole Farm Veggie Food Safety
The bottom line, experts said, is that there is an extremely low risk of contracting coronavirus from the food supply.... Source
