Here is how things stand at the moment:

Step 2 of Phase 2- 
effective as of Monday, June 22nd
Things that have opened already: Phase 3 will NOT start
before July 6th
When the weather clears, pick up some food, find a spot you can socially distance, and have a picnic outside!

Easy Spiralized Sweet Potato Latkes

YIELD:4 SERVINGS     COURSE:Side Dish

5-ingredient Sweet Potato Latkes – a healthier take on the traditional deep fried potato pancakes, these are lightly pan fried in a small amount of olive oil, made with sweet potatoes instead of white and made EASY by using a spiralizer because it eliminates the need to grate the potatoes, which can take a lot of time.


INGREDIENTS

1 large, 11 oz peeled sweet potato, peeled
1/2 cup chopped scallions
2 large eggs, beaten
4 cloves crushed garlic
1/2 tsp kosher salt and fresh black pepper to taste
4 teaspoons olive oil
 

INSTRUCTIONS

- Cut the sweet potato in half so it fits easily into the spiralizer, or use a box grater (larger side)
- Spiralize with the smaller noodle blade of the spiralizer. Cut into smaller pieces, about 5 inches long.
- Mix together the sweet potatoes, scallions, eggs, garlic, salt and pepper in a large bowl and mix well to combine.
- Heat a large nonstick skillet over medium-low heat. When hot add 1 teaspoon of oil and swirl around the pan.
- Using a fork, grab some of the sweet potato mixture (roughly 1/3 cup), and gently place it in the skillet lightly pressing down with the fork.
- Cook until golden on the bottom, about 3 minutes then flip with a spatula. Use the spatula to press them down to flatten and cook until golden, about 3 more minutes.

Serving: 3 latkes,

Protein: 4.5g, Fat: 7g, Cholesterol: 93mg, Sodium: 194mg, Fiber: 2g, Sugar: 4g

Happy July Everyone! 

We hope everyone is continuing to doing well.  Our new normals are coming into view, and we are starting to see what our future will look like, at least for a while.  Hope you are finding ways to occupy your time, keep stimulated and social.  

This year's 4th of July won't be like the ones of the past, but we hope you will find a way to celebrate.  We have some links below to inspire you!

Our Covid-19 numbers seem to be trending in the right direction, but there are so many surges in other states.  With people feeling stuck, and it's warm, people will travel, so please do your best to stay safe!  There are people in varying conditions, with underlying conditions we may not know about, so be safe for you, your neighbors, and your loved ones.

Be kind, be safe, be healthy, and spread the love!
