Upcoming this Sat., July 4th
Founding Farmers...
humble birth of a farming nation....
Exerpt:
Attentive scientific agriculture --
from the "lowliest weed to the loftiest tree".
Rice was carried over to America in coat pockets
for experimental gardens and distributed
"a dozen or two grains to each."
Also established were rare grasses, pumpkins, and lemon carrots. Exotic varieties of apples, pears, plums, peaches, and cherries also took root.
Conservation crop rotation is one of the 100-plus conservation practices that USDA’s Natural Resources Conservation Service helps farmers plan and implement because of its many benefits to soil and production.
Cropping systems included cover crops
to prevent erosion and improve soil.
“The Founders, Farms and Facts,”
and the book “Founding Gardeners.”
These founding farmers were among the earliest proponents of soil health in America, as they used crop rotations and organic fertilizers to boost soil health and production. Actually, many of the farming methods implemented on their farms align with conservation practices that USDA recommends to farmers today.

Thankful for goodness.

✽Chlorophyll
Microgreens undergo photosynthesis when chlorophyll gets created, which is a rich source of nutrients - vitamins and minerals.
✽Blood-Cleaning Properties
Chlorophyll is chemically similar to hemoglobin, a protein that is essential in red blood cells as it carries oxygen around our body.
Chlorophyll rich microgreens: spinach, collard greens, mustard greens, parsley, parsley broccoli, green cabbage, green beans and peas
If we want a clean body -- clean our blood.
The body makes around 2 million red blood cells per second.
Clean blood begins in 7-10 days. Our blood cells are made by our bones (marrow, stem cells, lymph, thymus, spleen) and replaced daily from food ingestion intake. How is our blood cleaned? What we intake – foods, drinks, absorb, smoke – it’s chemistry. Blood cells develop from stem cells in the bone marrow. Red blood cell replacement usually takes between 4 to 6 weeks. How quickly will our body replace blood cells? The first day of healthy intake, we begin making cleaner blood.
✽Essential Minerals
Microgreens absorb minerals from mineral-rich organic soil as they grow, increasing their nutritional content.
✽Digestive Fiber
Microgreens offer slightly more fiber than sprouts.
✽Benefits
Source.
Vitamin and antioxidant levels varied, levels measured in microgreens were up to 40 times higher than those recorded for more mature leaves Source
They can be 9 times more nutritious than the mature plant, (5) and 2-3 times more nutritious than sprouts.
Red cabbage microgreens contain six times the vitamin C of their full-grown counterpart, and a whopping 69 times as much vitamin K. Source.
Top four most nutrient-dense were red cabbage, green daikon radish, cilantro and garnet amaranth. Source
Microgreens contain anywhere from four to 40 times as many nutrients as their full-grown vegetable counterparts — including vitamin C, carotenoids (beta-carotene, lutein and zeaxanthin) and vitamin E. In some cases, nutrient content is even higher. Source.
It is evident that most plants show declining nutrient composition with advancing development towards maturation. (Cogswell and Kamstra 1976; Ishiguri 1975; Kamstra 1973 Source.
Absorb-able Nutrients: Plants may have as much as 30% fewer digestible nutrients after blooming, accompanied by another 30% reduction in intake. Reid et al. (1959) Source.
✽Varieties
The most popular varieties are produced using seeds from the following plant families (1):
- Brassicaceae family: Cauliflower, broccoli, cabbage, watercress, radish and arugula
- Asteraceae family: Lettuce, endive, chicory and radicchio
- Apiaceae family: Dill, carrot, fennel and celery
- Amaryllidaceae family: Garlic, onion, leek
- Amaranthaceae family: Amaranth, quinoa swiss chard, beet and spinach
- Cucurbitaceae family: Melon, cucumber and squash Source
Peas, Sunflowers and Radish Microgreens!
✽Protein-rich
If you're following vegan practices, protein-rich sprouts can make it easier to meet our protein requirements and prevent nutrient deficiencies.
✽Safety Protocol
Read this step-by-step guide to learn how to grow microgreens correctly and eat them raw. Adding a teaspoon of food-grade hydrogen peroxide like this one into the water when soaking the seeds. Source.
✽Microgreens are Peak Nutrition - the most nutritious stage of any plant.✽

Fall Garden Begins NOW
Georgia growing season has two major planting periods:
Spring: Planted March to May. Harvested in June & July.
Fall: Planted July to September. Harvested in October to December.
With growing season extenders, we can grow year round in Georgia.
Fall Checklist
Old Farmer's Almanac First Fall Frost Nov 13
NOAA Weather: First Fall Frost Mid-November across central Georgia. Frost & Freeze Alerts
June
This month while enjoying the harvest season bounty....
Kitchen & Pantry: Be certain to preserve the bounty to last all winter until next summer 2021.
Indoor activity: Begin to gather seeds to start for your fall garden! Choose organic, heirloom fall varieties to save viable seeds from your harvest.
Tried and true UGA Seed List here.
Fall is the time for lettuce, spinach, collards, mustard greens and kale. There are so many varieties of delicious lettuces, you couldn’t possibly grow them all!
Make a Custom Planting Chart for your seeds: In order to calculate the planting date, determine the frost date and count back the number of days to maturity plus 18 days for harvest of the crop. If snap beans mature in 55 days and our frost date is November 15, we should plant on or before September 3. UGA Planting chart here.
July
Start planning the fall garden.
Plant the following vegetables not later than July 20 to allow time to mature before frost: tomatoes, okra, corn, pole beans and lima beans. Also plant cucumbers, squash and snap beans.
Plant your superfood pumpkins and winter squash - acorn, butternut
August
Plant the following no later than:
—August 15: Snap beans and Irish potatoes (seed can be sprouted two to three weeks before planting).
—August 31: Cucumbers and squash; plant varieties resistant to downy mildew.
Start plants for beets, broccoli, cabbage, carrots, collards, lettuce, mustard, onions, radishes, spinach and turnips in a half-shaded area for setting out in September.
September
Transplant the following: beets, broccoli, cabbage, carrots, collards, lettuce, mustard, onions, radishes, spinach and turnips.
Plant your second planting of fall crops such as collards, turnips, cabbage, mustard and kale.
Begin to gather seeds to start for your fall garden!

Dried foods—when kept dry—remain edible virtually forever.
Dehydrating is one of the best ways to preserve food for long term storage.
Dehydrating requires less energy
than canning or freezing, and if stored properly,
dehydrated foods will last for many years.
Soup is a perfect way to use dehydrated veggies,
since the vegetables need to be rehydrated before eating.
A favorite to dehydrate is tomatoes.
If stored properly, dehydrated tomatoes can last many years. Soups are delicious with rehydrated tomatoes.

Orchard Fruits Dehydrate Well
including Apples, Peaches, Pears, Pineapple, Grapes, Plums, Apricots.
Peak Season Bounty: When fruit drying is performed during the peak season for your chosen fruit, you’ll be dehydrating different fruits at different times of the year. Grapes, strawberries, and peaches all have different peak seasons.
Lemon Juice Soak: For a few fruits, such as apples, strawberries and bananas, you should spray the slices with lemon juice to prevent browning and assure no bacterial growth while in the drying process
To make fruit leather, mashed potatoes or sauces
you will need a silicone or nonstick liner.
Non-stick sheets are reusable and work better than parchment paper.
Never use wax paper for fruit leathers. It melts.

9-Trays of Strawberries for Excalibur Dehydrator
When dehydrating fruits, you want to soak them first in a solution that will limit bacteria and keep the fruit from becoming too dark. You can use a citric acid solution or a mix of half lemon juice and half water. Commonly dried fruits include apples, grapes, plums, pineapple, pears, figs, apricots, berries, bananas, cherries and peaches, although you can dry other fruits, like melons, as well. You can also spread pureed fruits on trays and dehydrate the puree into fruit leather. Dried fruits can be added to salads, trail mix, granola or main dishes or reconstituted and used in fruit desserts like cobblers and crisps. Once dehydrated, fruits will be leathery in texture but still pliable. Source.
UGA Conditioning Steps
Conditioning is the process used to equalize the moisture. It reduces the risk of mold growth.
To condition the fruit, take the dried fruit that has cooled and pack it loosely in plastic or glass jars. Seal the containers and let them stand for 7 to 10 days. The excess moisture in some pieces will be absorbed by the drier pieces. Shake the jars daily to separate the pieces and check the moisture condensation. Glass containers are excellent for storage because any moisture that collects on the inside can be seen easily. If condensation develops in the jar, return the fruit to the dehydrator for more drying. After conditioning, package and store the fruit as described above. Source.
Dehydrated Apple Slices
Use dehydrated veggies to nourish now in casseroles, muffins,
breads, omelets, sauces, soups, stews & more
or make healthy Thermos Lunches through the autumn & winter.

Dehydrated
Fruits, Tomatoes, Kale, Veggies
Fortunately, drying is one of the best food preservation methods due to its
high retention of essential nutrients.
Bananas can be frozen and dehydrated, but are not supposed to be canned or placed in cold storage.
Apples can be dehydrated well and placed in a cold storage.
For berries, they can be frozen, dehydrated, or made into jam.
(Related: How to Preserve Food and Storing Food Safely and Naturally.)
Drying or dehydrating your food is probably the best option when you have limited storage space. Dried or dehydrated food will take up the least amount of room and will store the longest.
Dehydrated Tomatoes.
Preserve dry or in oil for pasta, rice or veggie dishes.

Refined-Sugar FREE
Sugar feeds all the bugs: viruses, bacteria, fungus, and parasites.
Limiting SUGAR is essential to strengthening our immune system & speeding recovery.
Sugar stimulates dopamine, which rapidly reduces stress.
But stress-induced cravings can quickly lead to
high blood sugar and lowered immunity. The problem is not just the raised blood sugar alone, but kidney failure and stroke.
With healthy changes, we can overcome symptoms of sugar withdrawal and improve overall well-being.
The benefits we stand to gain by eliminating excess sugar consumption can have a positive impact on our overall well-being. Source.
4 Healthy Switches
Switch to protein-rich foods like nut butters, peas, egg whites, lean meat and fish to make up the energy that sugar used to provide.
Switch to take short walks, listen to music, take a shower or practice mindfulness exercises.
Switch to fiber that regulates glucose levels including whole-grain oats, beans and legumes.
Switch to fruits that contain low natural sugars like berries and tart apples.
Pure Water
Stay hydrated with pure, mineral-rich water to regulate metabolism and inhibit the absorption of excess glucose that causes fatty liver disease.
Exercise
Exercise regularly to jumpstart metabolism, improve energy and minimize stress. Short bouts of exercise can also discourage compulsive cravings.
Juicing
Create our own vegetable juice to pacify sugar cravings. We can use veggies like spinach, cucumber, kale and parsley.
Restful Sleep
Lack of sleep can cause cravings, fatigue and mood swings. Restful sleep is linked to higher energy, improved focus and minimal stress.

There are many exceptions to the “shelter in place” order, allowing residents to leave their homes. Those essential actions include obtaining groceries, medication, outdoor exercise and work-related responsibilities. Restaurants will also still be able to offer takeout and delivery services, but dine-in services must cease.
A total of 16 critical infrastructure sectors have been designated during pandemic, with the Food and Agriculture sector being one of those. Read more here: https://www.cisa.gov/food-and-agriculture-sector

Crowds full of people that can cough or sneeze or spread their germs on grocery carts and checkout lines. That's part of why social distancing has been encouraged and part of the reason grocery box stores can be a problem.
3. Safety-yes.
The good news about food safety and coronavirus: It’s the same advice we’ve known all along. Source
UGA Center for Food Safety - Update on Farm Veggies
“There is a very slim chance or almost none that the virus is going to be present in the food. There is no evidence it is transmitted through fresh produce," he adds. Francisco Diez-Gonzalez, director of the Center for Food Safety at the University of Georgia. “We’re quickly trying to respond.” He notes a virologist is on staff gathering data specific to coronavirus.
Cook Food - to the proper temperature.
“The virus is very sensitive to cooking,” Diez-Gonzalez says. “Heat is going to kill it very easily.” Use a digital thermometer, and check against the government’s safe minimum cooking temperature chart. The transmission through foods is not possible if the foods are cooked properly since coronaviruses are inactivated by heat. Source.
Home Prep - Farm Veggie Safety
Wash your veggies, white vinegar rinse is optional.
Cleaning surfaces is also important. “As with any food safety measures, you should always wash your hands before, during, and after food preparation and before you eat any foods,” Ilic said. “Additionally, you should be sure to carefully wash any surfaces used for food preparation.” Source
The virus is NOT likely to be transmitted by food itself.
Are food deliveries and groceries safe during pandemic? Yes, experts say. First, the good news: The virus is not likely to be transmitted by food itself, said Dr. Ian Williams, chief of the Outbreak Response and Prevention Branch of the US Centers for Disease Control and Prevention, which investigates foodborne and waterborne illnesses.
Digestive Science - on Virus and our Windpipe
Even if the virus gets into your mouth, drinking water or other liquids will wash them down through your throat and into the stomach. Once there, your stomach acid will kill all the virus. If, however, virus enters your windpipe through nose or mouth and then into the lungs, that’s very dangerous. So, even if you did eat food with the virus, there are not many receptors in the digestive track for the virus to cling to, so swallowing the virus would not likely lead to contracting the illness. In other words, your digestive system would get rid of it, Williams said. Drink fresh water often.
Packaging - Whole Farm Foods
"While it's possible that the virus gets deposited [on packaging] we have no indication from epidemiology or the literature that this is a risk factor for Covid-19 or other respiratory illnesses," Chapman said. The US Food and Drug Administration echoed that sentiment, saying it's not aware of any reports suggesting Covid-19 can be transmitted by food or food packaging.
USDA - Farm Veggie Safety
Q: Are food products produced in the United States a risk for the spread of COVID-19?
- A: There is no evidence to suggest that food produced in the United States can transmit COVID-19.
Q: Can I become sick with coronavirus (COVID-19) from food?
- A: We are not aware of any reports at this time of human illnesses that suggest COVID-19 can be transmitted by food or food packaging. However, it is always important to follow good hygiene practices (i.e., wash hands and surfaces often, separate raw meat from other foods, cook to the right temperature, and refrigerate foods promptly) when handling or preparing foods.
Bottom Line - Whole Farm Veggie Food Safety
The bottom line, experts said, is that there is an extremely low risk of contracting coronavirus from the food supply.... Source
