A Rustic Tomato Tart: Free-form tarts are the savior of the unfussy cook. Unlike tarts baked in a pan, there’s no need to worry about trimming dough, rolling out perfect circles, or using pie weights. They’re the sort of thing I love to pull from my oven year round, but especially in conjunction with peak tomato season. A beautiful tomato tart layered with jammy, caramelized onions, laced with fresh basil alongside a simple green salad? Good lord yes.

love this salsa recipe (above), and make it every year for Fourth of July (and throughout the summer). While it appears deceptively average, it actually delivers electric flavor with each bite. When you're ready to move on from salsa fresca, make this. What you'll have is a deliciously vibrant, earthy, and slightly smoky-tasting salsa. The deep, caramelized flavors of roasted tomatoes and onions alongside the smokiness of the chipotles make for a richly beautiful and balanced combination. And, that color! Curried Tomato Tortellini Soup //

A fortifying lentil and tomato-based stew, dotted with plump, tender dumplings, spiked with a range of spices, and boosted with plenty of spinach. It's so delicious, and simple, week-night friendly, and great for leftovers. The recipe calls for canned tomatoes, but this time of year I substitute a rough equivalent of fresh tomatoes, chopped, with juices. If you have tomatoes in your garden it's a great way to use any that might be a bit blemished or are less than perfect. Try the recipe!

This is the tomato sauce I make more than any other. It comes together in five minutes flat, and the only chopping required is a few garlic cloves. It is bright and clean, a vibrant red in color, and exudes the essence of tomatoes, in part because there isn't much to get in the way of the tomato flavor. And like the soup up above, you can absolutely do a fresh tomato version. Try the recipe!
