ADAPTING TO DIFFICULT TIMES

Scarborough Fair, Sea Girt, had just completed a lengthy, often delayed and expensive inside renovation when things shut down due to the virus.
|
|
|
|
But they adapted by creating a take-out menu and then a stunning outdoor space for dining once that became an option. A beer, wine and spirits menu was developed for "to go" orders and menu items were added that were conducive to take-out. Now you'll find a Global Sandwich Menu as well as many Scarborough favorites.
The best story though, is one of customer service in these difficult times. Some friends of ours stopped by the restaurant one Sunday, looking for some take-out. They were greeted by the owner, Mike Fotino, who told them the restaurant was closed for the day. He asked them what they were looking for and when they told him, he said, "you know what, I can make that for you."...and he did and then he delivered it to their home in Wall. Scarborough Fair will survive these times, just because they should.

We love summer beach dinners, particularly Thursdays when there are fireworks (well, most years). Here's one of our favorite beach dinner recipes
BLT Salad
1 1/2 cup cooked and cooled rigatoni
6 strips Applewood smoked bacon
3/4 cup of cherry tomatoes, halved

3/4 cup of cubed American or Cheddar cheese, halved
1 tablespoon fresh chopped chives
1/2 cup Hellman's mayo
Salt & pepper to taste
Mix it all together, chill. Serve with crusty bread and La Vielle Ferme Rose.
