A lot has changed in the past couple of months but our mission and goals remain the same. We are continuing to build a thriving community by maximizing abundance, access, and affordability of fresh, healthy, and local food. Today we realize that Food Co-Ops can help mitigate the food short supplies at chain supermarkets and pivot quickly to meet demand. “The best thing about the local food movement is that we have a different supply chain, and when demand increases, we’re able to move more quickly with local suppliers.”

Because of modern agriculture and food processing techniques, most foods are available year-round. Many are imported from thousands of miles away with little or no way of knowing where they came from or how long they have been in transit. However, the techniques they use to ripen fruits and vegetables and make them available at any time of the year often result in the loss of nutrients, which doesn’t happen when they are allowed to ripen on their parent plant. Seasonal food is fresher, tastier, and more nutritious than food consumed out of season. Here is a guide to help you find what is in season near you!
 

BLUEBERRY-BEET BRUSCHETTA

INGREDIENTS

  • 3 red or golden beets
  • 1 baguette, sliced on the diagonal
  • 2 teaspoons olive oil, plus extra for brushing
  • 1/2 cup fresh blueberries
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons chopped fresh chives
  • 1 orange, zested (optional)
  • Salt and pepper, to taste
  • 5 ounces chèvre cheese, at room temperature

DIRECTIONS: Preheat oven to 425° F. Wrap beets in foil and place on a baking sheet. Roast until tender, 40 to 60 minutes. Cool and peel off skins; cut beets into small cubes. Brush baguette slices with oil and place on a baking sheet. Toast until golden brown, flipping halfway through, about 7 minutes. In a small bowl, toss together beets, blueberries, 2 teaspoons oil, vinegar, chives, orange zest, salt, and pepper. Right before serving, spread toasts with cheese and top with a spoonful of beet-blueberry mixture.
