HGC Owner Drive Continues

Have you found ONE new owner yet? As we look to the next stage in our grocery co-op vision, we need YOU to GROW YOUR CO-OP!

The board of directors is asking our current owners to find one new owner to join the co-op by the end of July. If each HGC owner finds one new owner, we will reach our ownership goals and can begin some important next steps. We can:
  • Update the Market Feasibility study to include current store options.
  • Establish a business plan and budget for store.
  • Kick off a capital campaign to secure financing for the co-op.
Remember, for each new owner you recruit, your name will be placed in a drawing to win a $50 gift certificate to Urban Olive and Vine.

HGC ownership is open to individuals and businesses who wish to support bringing a grocery co-op to Hudson. Visit the HGC website to join at any time.

Thank you to HGC owner Jill Kivi for recruiting new owner #596 Edie Brennan. Edie is a business owner in downtown Hudson of Solo Yoga + Bxng studio.

I Own a Grocery Store with Some Friends

Shared from: Co+op, welcome to the table

I am probably the last person you would expect to own a grocery store, and yet, I do. In fact, I own three. I am a Midwestern, married suburban mother of two, my car is twelve years old and most of my fashion finds come from the thrift store. I don’t fit the bill for corporate honcho, and my bank account corroborates that truth.

So how do I manage to own not one but three successful grocery stores? I guess in true “industry disruptor” style, I found a unique solution to a common problem: how to get the kind of food I want, and have my voice heard by a place where I shop. That solution is food co-ops. My local food co-op offers me fresh local food, a way to support my community and the opportunity to invest in the co-op, ensuring it remains a resource in our community for good.

HGC Partners with RiverFest

The Grocery Co-op will be joining the RiverFest celebration, July 21 - 25. In light of current COVID-19 health concerns RiverFest will be held as a virtual event this year. Several RiverFest partner organizations are creating video presentations that encourage people of all ages to get out and enjoy the St. Croix River, while also recognizing the need to preserve its health and beauty.

HGC owner Russ Lake presented a foraging garden walk for Hudson Grocery Co-op which was filmed by the River Channel. We had a fun time wondering through his garden and exploring edible plants. From common garden plants like daisies and hostas to wilder plants like burdock and wood sorrel, there was an abundance of plants to discuss and film for the RiverFest video.

You can watch the Foraging Garden Walk video during RiverFest. Check out the program schedule and learn more about RiverFest at https://stcroixriverfest.org

Erica Perry - Owner #129

My husband and I have lived in Hudson since 2003. We are both nurse anesthetists and have no children, but we have two rescue English springer spaniels; Henry and Bazooka Bob.

I joined the co-op because I've had amazing shopping experiences in the past at the Grand Marais, Cambridge and Stillwater Minnesota co-ops. Prior to heading out on long hikes, I could stop into the co-ops and stock up on great trail foods!

My favorite food memory is from when I was younger. For our birthday my parents would let us choose the dinner meal. One year I chose an assortment of seafood; swordfish, calamari and shrimp. I'm sure we overcooked everything but the new experience of trying different food was worth it. And now I love calamari!

Stars and Stripes Sandwiches

Recipe from: Co+op, stronger together

Total Time: 20 minutes
Servings: 3

Celebrate the 4th of July with these easy and healthy festive eats!

Ingredients:
1 cup strawberries
1 cup raspberries
1 banana
1 cup blueberries
Light cream cheese
3 slices of whole wheat bread
Berry jam

Preparation:
Thinly slice 1/2 cup strawberries. Cut all the raspberries in half. Slice the entire banana. Toast three slices of bread. Spread a layer of cream cheese over the top of each toasted slice.

Starry Night:
Form a star shape using five strawberry slices. Put the star in the middle of a toasted bread slice. Outline the strawberry star with cut raspberries. Fill up the rest of the toasted slice with blueberries. Cut off the top of a whole strawberry. Place it in the middle of the star.

Stripes Forever:
Cut banana slices in half across the middle. Lay the slices in a vertical row on the right-hand side of the second toasted bread slice. Make a row of cut raspberries next to the banana slices. Make a row of blueberries next to the raspberries. Continue making rows of banana slices, raspberries, and blueberries until the toasted slice is filled.

Land of the Free:
Make two horizontal lines of three blueberries in the upper left-hand corner of the last toasted bread slice. Make three horizontal lines of jam on the toast. Use a knife to make the lines even and thin. Make sure a line runs into the blueberries. Place cut raspberries on top of the lines of jam.

Serving Suggestion:
Serve with replacement fruit so that once kids eat the strawberry star, for example, they can replace it with a raspberry star, then a banana star, etc.
