Prairie Tomme
Right on the western border of Missouri, across the Missouri River from Kansas, and slightly north of the sprawling Kansas City, sits Green Dirt Farm - a sheep farm and cheesemaking facility, which was opened in 2002.
The farm has their own mixed breed flock of sheep, which graze on the local pastures. These local pastures have been sustainably built up over the years with only the use of natural fertilizer: read sheep manure. The high quality soil produced this way, leads to rich grass, and ultimately high quality milk and cheese.
The Prairie Tomme is modeled on an aged French tomme de brebis, but with a more complex taste than we've found in a French tomme before: milky, brown buttery, lactic and grassy. The ivory white paste even has scattered crystals throughout, for that extra textural sensation.
Definitely a cheese with a lot to say for itself!
