Zero-Waste Week


Zero Waste Week, 2019, runs from 2nd – 6th September and is a time for businesses and individuals to look at changing the way we consume and manage the by-products of our consumption. 



We’re using this week to look at those Brighton hospitality venues that are taking assertive action in general, not just in zero waste or waste reduction, to create a more sustainable future and address the climate crisis. Read more.
 

Sustainability Spotlight | Zero-Waste Week

Industry People -  Nicholas Röhl, Moshimo

We meet Nicholas from Brighton's Moshimo who tells us how they are doing everything possible to tackle climate change.



He highlights their commitment to (and promotion of) fish sustainability and plant-based eating, and how 2019 saw them receive the award for Brighton's most sustainable restaurant, as voted for by the general public. 


 

The Moshimo Vegan Challenge

The quarterly Moshimo Vegan Challenge brings together the top chefs in the city to create Asian inspired plant-based dishes, voted for by the diners in a gourmet extraVEGANza. This years finals will be held at Moshimo on Thursday 26th September. Find out more.

One Planet Plate | Zero-Waste Week



The decisions we make around the food we eat have the greatest impact on the environment - more than the car we drive or the flights we take. 

Any restaurant that's serious about climate change will be helping its customers use the power of their appetites wisely. That's why the Sustainable Restaurant Association have launched One Planet Plate.

One Planet Plate is the perfect vehicle for chefs to highlight a dish that encapsulates their ethos in tasty, tangible food form and the new concept comes to Lucky Beach on 11th September.

Apprentice of the year becomes Hilton General Manager

Twenty-year-old apprentice Elizabeth Hughes took on the role of General Manager at Hilton Brighton Metropole for a day, making her the youngest Hilton Team Member ever to run a hotel. This video provides an insight to Elizabeth's experiences on the day, and how apprentices develop.
 


Valley Gardens update 
The next phase of the Valley Gardens redevelopment starts on 2nd September.  Wider pavements are going to provide greater scope for cafés, bars and restaurants to have outdoor seating areas. More details. 
 



Brighton Chocolate Festival - 12th, 13th October 

Next month. Indulge your senses during the Brighton Chocolate Festival weekend and discover a selection of chocolate-themed exhibitors, including award-winning chocolatiers and chocolate makers. Highlighting sustainable, ethical products, with traceability, and made with human compassion for those who work in the cocoa fields. Held at the Hilton hotel 11-5pm, free entry.

We interview Adam from The Real Junk Food Project in Brighton. The international movement of cafes, projects and pop-ups has saved close to 5 million kilograms of food from going to waste. Read more.

Vote at the Food Made Good Awards 

Since 2012, the Food Made Good Awards have been the shop window for pioneering sustainability progress in the hospitality industry, and a celebration of successful initiatives and innovative ideas.

Submissions for the Food Made Good Awards 2019 are open until Friday 13th September. Restaurants should check out the 20 categories and enter now for a chance to win, and to share their inspirational sustainability success with the industry. This year there are a number of new awards, including Chef of the Year. The awards will be presented by SRA President Raymond Blanc OBE and Melissa Hemsley at Troxy in London. Tickets are available here.

Labour plans to ban boiling lobsters alive 

Labour’s Animal Welfare Manifesto was announced last week and proposed major overhauls to British protections for animals. Objectives included to ban boiling lobsters alive (same as in Switzerland and New Zealand) and ending the use of cages on British farms by 2025.
